A Thankfulness Check List

As I was scrolling through my phone on a lazy day before Thanksgiving, I happened upon an article on LaurenConrad.com entitled Holiday Special: My Thanksgiving Thankfulness Cheat Sheet. In the article, Lauren goes through a ten item thankfulness "cheat sheet" or check list. Each item suggests a different aspect of life to be thankful for. This article inspired me to fill out my own check list and in the process, think a little more about all the blessings in my life. So here it goes:

1. A person who came into my life this year who I am thankful for:

Well this one is pretty crystal clear. At the beginning of summer, I trudged on home, not entirely excited about spending 3 months away from my friends at TCU. And for about the millionth time, God gave me exactly what I needed. I met these 10 wonderful humans who made everyday at work feel nothing like work. These people made my summer (and 20th birthday) quite memorable and continue to be some of my best friends.

2. An old friend who I feel lucky to have:

Well I have some pretty great friends, from my wonderful roommates to my high school best friend who I talk to everyday (even when she's half way across the globe). I'm amazed at the way these friendships not only stay strong but also grow in unexpected and amazing ways.

3. A furry friend who I'm thankful for:

Well my dogs are currently taking a nap on the couch next to me. Enough said there.

4. Something I'm thankful for at work:

Well I don't currently have a full-time job (yay college) so I'll say that I'm really happy to have found a great major and friends to take all my classes with.

5. Something I'm thankful for home:

Well besides my wonderful family, I'm going with those breathtaking mountains I get to see from my window everyday. And of course, the potatoes at The Buff, the tortellini at Pasta Jay's, and the pizza at Cosmos.

6. Something I'm thankful for about my family:

The way they always love me, besides all my flaws and mistakes.

7. An experience that I feel lucky to have had this year:

Well I'm not sure I can pick just one so I'm going to give y'all my top three:

-having the best summer ever at camp

-moving into my very first (almost) adult home

-parasailing (#wayupIfeelblessed) in Key Largo

8. A simple pleasure I enjoy:

I'm going to go with my guilty pleasure here which is large Diet Coke with lime from Sonic

9. Something big that I make sure not to take for granted:

The opportunity to get a wonderful education at the best school on earth. Go Frogs!!

10. A yummy Thanksgiving food that I am excited to eat:

While the holiday has already passed, but let me tell you the mashed potatoes were heavenly.

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

I can't say "thank you" enough to express how grateful I am for you coming into my life. You have made such a huge impact on my life. I would not be the person I am today without you and I know that you will keep inspiring me to become an even better version of myself.

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register. You might change your mind about a class you want to take and must struggle to find another class to fit in the same time period. You also have to make sure no classes clash by time. Like I said, it's a big hassle.

This semester, I was waitlisted for two classes. Most people in this situation, especially first years, freak out because they don't know what to do. Here is what you should do when this happens.

Challah vs. Easter Bread: A Delicious Dilemma

Is there really such a difference in Challah bread or Easter Bread?

Ever since I could remember, it was a treat to receive Easter Bread made by my grandmother. We would only have it once a year and the wait was excruciating. Now that my grandmother has gotten older, she has stopped baking a lot of her recipes that require a lot of hand usage--her traditional Italian baking means no machines. So for the past few years, I have missed enjoying my Easter Bread.
