A Letter to my University: University of Northern Colorado

Dear University of Northern Colorado,

I'll be honest, as a Greeley native I did not want to attend UNC. I always knew UNC was a wonderful university, however, I wanted something new. I thought that if i stayed in my hometown for college I was not going to get the full college experience. I also thought that I was not going to meet new people. It turns out that attending the University of Northern Colorado was the best decision I've made so far. UNC, you were good to me my freshman year of college and I know you will continue to bring good things my way.

Thank you for making me feel comfortable as a first generation student. The diversity and support systems on campus have helped me with the obstacles of being a first generation student. Thank you for having programs such as CHE that help students like me succeed. Thank you for having the Women's Resource Center where I can find extra support from strong women. Thank you for the Cesar Chavez Cultural Center where I can go in and be treated like family from students and staff. I truly feel like my destiny was to become a bear and when I am at UNC I know I'm home and I belong there.

University of Northern Colorado, since I'm being honest, I'll admit I was scared to start college. I feared that to the professors I was going to be just another number. Thankfully, it didn't turn out that way. Most of my professors slowly but surely, learned my name. Not only that, but they were always willing to help whether that meant to go in to class earlier or stay later to meet with me. UNC, thank you for providing me with amazing professors, I'm definitely getting my moneys worth.

I absolutely love everything about you, UNC. I love going into the library and seeing students cramming for finals. Going into the library and seeing other students at 11 p.m. trying to finish projects in a rush because they procrastinated makes me feel better because at least I know I'm not the only one that procrastinates. But walking into the library and seeing how everyone is there for an education is a better feeling. The UC is another special place in my heart. Although I dislike the long line at Subway during lunch, the UC is where we can socialize a bit and add to the freshman 15!

University of Northern Colorado, I cannot wait until I receive my degree from you. Although I had negative feelings about you, I'm more than content with how things are going. When I walk across that stage, I'll be able to say that I am the first in my family to receive a degree and I received it from the university that stole my heart.

Sincerely,

A Sophomore Bear

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

I can't say "thank you" enough to express how grateful I am for you coming into my life. You have made such a huge impact on my life. I would not be the person I am today without you and I know that you will keep inspiring me to become an even better version of myself.

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register. You might change your mind about a class you want to take and must struggle to find another class to fit in the same time period. You also have to make sure no classes clash by time. Like I said, it's a big hassle.

This semester, I was waitlisted for two classes. Most people in this situation, especially first years, freak out because they don't know what to do. Here is what you should do when this happens.

Challah vs. Easter Bread: A Delicious Dilemma

Is there really such a difference in Challah bread or Easter Bread?

Ever since I could remember, it was a treat to receive Easter Bread made by my grandmother. We would only have it once a year and the wait was excruciating. Now that my grandmother has gotten older, she has stopped baking a lot of her recipes that require a lot of hand usage--her traditional Italian baking means no machines. So for the past few years, I have missed enjoying my Easter Bread.
