With Super Bowl 50 coming up this weekend, it's time to think of what dish you'll be bringing to the party. You don't want something too fancy and hard to eat, but a bag of chips just says I forgot to make something. Here are five easy recipes that are sure to please all the football fans at your Super Bowl party.
1. Crockpot Mexican Chili
Typically known as Taco Soup, I call it Mexican Chili cause it's less soupy and more chunky. Great paired with tortilla chips or in a bowl topped with sour cream and cheese.
Ingredients:
1 can of red kidney beans (I used Dark), 1 can of black beans, 1 can of petite diced tomatoes, 1 can of tomato sauce, 1 bag of frozen corn, 1 package of regular taco seasoning, and 3-4 chicken breasts thawed
Directions:
1. Pour all ingredients except for Chicken into a crockpot and mix well.
2. Nestle chicken breasts into mixture until they're fully covered.
3. Cook on high for 4.5 hours.
4. After cooking, take the chicken out and shred it using two forks, then mix it back into the chili.
5. Continue cooking for more 30 minutes.
2. Chocolate Chip Cookie Dough Dip
This dip is sweet and allows you to eat cookie dough without risking a Salmonella virus. It's quick and easy to make and best of all, tastes heavenly. Goes best when paired with Nilla Wafers, graham crackers, or pretzels. The secret is to chill it before you eat it!
Ingredients:
1/2 cup of butter, 1/3 cup of brown sugar, 1 tsp of vanilla, 8 oz of cream cheese – softened, 1/2 cup of powdered sugar, and 3/4 cup of mini chocolate chips.
Directions:
1. Melt the butter in a saucepan over medium heat.
2. Add the brown sugar and stir until all the sugar is dissolved and the mixture begins to boil then remove from heat and allow to cool for about 10 minutes
3. Once cool, add the vanilla to the butter and brown sugar mixture.
4. In a separate bowl, blend the cream cheese and powdered sugar together, beating on medium speed for a minute.
5. Reduced speed to low and mix in the butter mixture until completely blended.
6. Add chocolate chips to the mixture and mix until even.
7. Can be served immediately, but chill until serving time.
3. Crockpot Grape Jelly Meatballs
One of my personal favorites, these meatballs are easy to make before the game because you throw it in the crockpot and walk away until it's time to leave. They mix sweet and spicy and are an easy eat for those can't miss commercials.
Ingredients:
2 pounds of frozen meatballs (I usually let mine thaw out for an hour or so before cooking), 12 oz of chili sauce, 1 1/2 cups of grape jelly
Directions:
1. Mix together grape jelly and chili sauce in the crockpot.
2. Add in the meatballs and stir. Make sure all the meatballs get saucy!
3. Cook on low for 4 hours.
4. Peanut Butter Dip
If you're like me and like to make cute party dishes, this one is perfect for you. It mixes the flavors of sweet and salty with chocolate, peanut butter, and pretzels, and makes it easy to just dip and watch. Make sure you warn all guests that underneath those yummy chocolate sprinkles is a slab of peanut butter. Emergency rooms are not the place to watch the Super Bowl!
Ingredients:
1/4 cup of butter (softened), 4 oz of cream cheese (softened), 1 cup of peanut butter (creamy is best), 1/2 teaspoon of vanilla extract, 1 1/2 cups of powdered sugar (up to 2 cups if needed), 1/2 cup of mini chocolate chips, chocolate sprinkles or chocolate chips for the outside of the football, and white chocolate or frosting for the football laces.
Directions:
1. Blend butter, cream cheese, and peanut butter until well-mixed (using a hand-held mixer).
2. Miix in vanilla
3. Add in powdered sugar, ½ cup at a time, and mix until combined (if you want a stiffer mixture, add the extra ½ cup of powdered sugar)
4. Mix in chocolate chips.
5. Scoop mixture onto a large sheet of waxed paper. Use your hands to form into a football shape.
6. Place the waxed paper onto your serving plate. (It helps if the plate has sides…less mess!) Cover in sprinkles or chocolate chips, pressing them into the surface a little so they stick. Pipe on the laces using melted white chocolate or some leftover frosting and chill until ready to serve.
5. Pepperoni Roll-Ups
These are great finger foods that are pretty much hassle and mess free. With so many snack foods being covered in sauces, it's nice to find one that is white-jersey approved. It's a smaller recipe (makes 8), so double or triple it as needed!
Ingredients:
1 can refrigerated crescent rolls, 40 slices pepperoni, 4 pieces of Mozzarella string cheese (cut in half), garlic powder, and pizza sauce.
Directions:
1. Preheat oven to 375.
2. Unroll crescent rolls and separate into 8 triangles.
3. Place 5 slices of pepperoni on each crescent roll.
4. Place string cheese on top of pepperoni and then roll up.
5. Sprinkle crescent rolls with garlic powder.
6. Place rolls on baking sheet and bake for 12-15 minutes, or until golden brown.
7. Serve with a side of warm pizza sauce.
