It's officially after Christmas! I'm already counting down the days for a Happy New Year with friends and family. So, I'm sure most of us eat ham for Christmas. What do we do with the leftovers? Here's three ideas:
1. Ham and potato soup.
Cold day + hot soup = perfection. This is a super easy recipe where you literally just throw everything into a slow cooker.
Ingredients: diced potatoes, onion, ham, thyme, parsley, pepper, broth, milk, sour cream, salt and pepper to taste.
Steps:
1. Add everything except the milk and sour cream to the crockpot.
2. Cook on low heat for seven hours.
3. Add milk and sour cream. Cook 15 minutes.
4. Salt and pepper to taste and enjoy!
2. Ham and hashbrown casserole.
This crowd-pleasing casserole is perfect for using up those leftovers!
Ingredients: 1 30oz bag of frozen shredded hash browns, 8oz sour cream, 2 cans of cream of chicken soup (undiluted), 1/2 cup butter (melted), cubed ham, 2 cups shredded cheddar cheese (save some for on top).
Steps:
1. Preheat oven to 350 degrees.
2. Mix all ingredients together in a lightly greased pan.
3. Sprinkle cheese on top and bake for 1 hour.
4. Enjoy!
3) Fried rice with ham.
After watching Gilmore Girls, you may have a craving for Chinese food. So, here's something different to try out.
Ingredients: Chopped ham, 3 cups cooked rice, 2 tablespoon sesame oil, chopped white onion, frozen peas and carrots (thawed), soy sauce to taste, 3 eggs (beaten), 2 tablespoons chopped green onion (optional).
Steps:
1) Preheat large skillet or wok to medium heat. Pour sesame oil on bottom. Add onion, ham, peas and carrots. Fry until tender.
2) Slide to one side of skillet or wok and pour eggs to the other side. Use spatula to scramble eggs. Mix everything together in skillet or wok.
3) Add rice. Pour soy sauce over. Stir everything together until fully cooked. Add chopped green onions if you want. Enjoy!
