Today I share my results regarding 4 recipes I tried and either succeeded or failed to prepare. Below are the outcomes of three desserts and one non-alcoholic beverage. I asked different people who I knew would give an honest opinion to provide feedback regarding the taste, texture, and appearance. However, their sole job was to say yes or no to the following question: Can this item replace a desert or beverage at a non-vegan event? The individuals are a mix that includes both vegan and non-vegans.

Please read the results below.

*Important fact: I must add that I am not a professional, so part of the like or dislike could be attributed to that. (laughter) Also the pictures below are of my results.

Dairy-Free Banana Ice Cream

The Process:

The recipe was easy to follow and required minimum effort. I enjoyed the taste and appearance.

Test Results:

Fawn (Vegan)

It was delicious. I loved it and I enjoy eating something that I know is not toxic. You did an excellent job and I am so very proud of you. I want to be like you when I grow up.

Trina (Vegan)

The bananas are tasty.

Anitra (Non Vegan)

The bananas were delicious.

Stan (Non Vegan)

The banana cream was good and light.

Vegan Chocolate Cup Cakes

The Process:

Time to prepare was not bad. At first glance, I felt a small amount of anxiety. The recipe called for sifting the powdered ingredients. However, the cupcakes were great and well worth the effort.

Test Results:

Katrice (Non Vegan)

I tried the cupcake it was good...it wasn't overly sweet (which really was a selling point for me) ...the icing is a little sweet I would suggest you trying a vegan version of whipped icing.... great job

Fawn (Vegan)

I did try the cupcake - it was delicious

Trina (Vegan)

The cupcakes were good, do you have anymore

Anitra (Non Vegan)

What did you say was in the vegan cupcake? (yum yum) This is soooo good. I need the recipe

Jocelyn (Non Vegan)

The texture is slightly different but I wouldn't think that was because it is vegan. It's more of a brownie texture. I liked it--not too sweet, not too bitter. Good job!

Andrea (Non Vegan)

umm, yes, I just don't like the grittiness of the sugar in the frosting. but taste wise it's the bomb. It tastes really good.

Mike (Non Vegan)

Different texture but was very good and would not know it was vegan if I had not disclosed.

Ken (Non Vegan)

Cupcake was great. I left one on my desk (overnight), to see how it keeps.

Shawanda (Non Vegan)

Yes, I ate with ice cream last night... It was good!!! I heated it in the microwave... How did it do with the heat? Did it change? texture ok? No it was fine!!! I only heated it for 8 secs.... like my cake warm with ice cream!!!

Stan (Non Vegan)

The cupcake was very good, moist, and full of flavor.

Fruit Leather

The Process:

Initially, I thought this is going to be great. Preparation was not bad only required pureeing all ingredients and spreading on a flat cooking sheet covered by a Silpat. The recipe required 4-5 hours to bake. However, it was not completely done only the edges. So, I had to remove the edges and place the content back in the oven for more baking. After all that time, it never completely baked. I gave up. Both, the process and taste were horrible.

Test Results:

Fawn (Vegan)

I am sorry to say that this is not good. I am not sure what it tastes like.

Trina (Vegan)

It smells good.

Mock Champagne

The Process:

Very simple to prepare and the taste was decent.

Stan (Non Vegan)

The drink was refreshing and festive.

For as long as I can remember, I have been listening to The Beatles. Every year, my mom would appropriately blast “Birthday” on anyone’s birthday. I knew all of the words to “Back In The U.S.S.R” by the time I was 5 (Even though I had no idea what or where the U.S.S.R was). I grew up with John, Paul, George, and Ringo instead Justin, JC, Joey, Chris and Lance (I had to google N*SYNC to remember their names). The highlight of my short life was Paul McCartney in concert twice. I’m not someone to “fangirl” but those days I fangirled hard. The music of The Beatles has gotten me through everything. Their songs have brought me more joy, peace, and comfort. I can listen to them in any situation and find what I need. Here are the best lyrics from The Beatles for every and any occasion.

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

I can't say "thank you" enough to express how grateful I am for you coming into my life. You have made such a huge impact on my life. I would not be the person I am today without you and I know that you will keep inspiring me to become an even better version of myself.

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register. You might change your mind about a class you want to take and must struggle to find another class to fit in the same time period. You also have to make sure no classes clash by time. Like I said, it's a big hassle.

This semester, I was waitlisted for two classes. Most people in this situation, especially first years, freak out because they don't know what to do. Here is what you should do when this happens.
