Celebrating more than just Mexican food

A Love Letter To The Steven Special

It's hard to find consistency in college. Every day is radically different than the one that precedes it. Seasons change, people come and go. Sometimes this constant transformation can be disorienting. Every college student needs something that will never vary- something steady, consistent and enduring. Something that they can always turn to, even in their darkest hour.

As students at The University of Arkansas, we have been incredibly blessed to have something that lives up to this call. It warms my heart to know that students from all walks of life can gather together in places all across town and experience something that never changes. Something that will always be there for them. I'm talking, of course, about the Steven Special. This amazing dish can be found at just about any Mexican restaurant around town.

The simple combination of chicken, rice and savory white queso never fails to satiate my hunger. No matter what Mexican restaurant I am at, or where I am in my crazy life, the Steven Special will always be there for me. Need to find some food that all of the roommates will agree on? Grab some Steven Specials! Want to celebrate after nabbing that internship you'd been hoping for? Hop on over and grab a Steven Special. Partied a little too hard Saturday night? My man Steven will hook you up with some Sunday comfort food.

I don't know who Steven is or where the dish was originally created, but he must have been a selfless man. He could have kept his incredible recipe to himself, or he could have just shared it with one restaurant. Lucky for us, Steven is not that kind of man. He chose to share his chicken, rice and queso gift with all mankind.

Perhaps this all sounds crazy. You may think that the Steven Special is just some food, but I promise you it is more than just chicken. In college we are too often faced with things that are difficult, unfamiliar and downright scary. Sometimes you don't know what to do or who to talk to. In that moment, there is great comfort having at least one constant in your life. You can leave everything behind for a few minutes, go to any Mexican restaurant and order a Steven Special which will always taste amazing.

The Steven Special is more than just food. It's a promise that no matter where you are in life, you can always count on a quality meal. That promise is one of a kind. Steven has truly crafted something special. Thank you, Steven.

For as long as I can remember, I have been listening to The Beatles. Every year, my mom would appropriately blast “Birthday” on anyone’s birthday. I knew all of the words to “Back In The U.S.S.R” by the time I was 5 (Even though I had no idea what or where the U.S.S.R was). I grew up with John, Paul, George, and Ringo instead Justin, JC, Joey, Chris and Lance (I had to google N*SYNC to remember their names). The highlight of my short life was Paul McCartney in concert twice. I’m not someone to “fangirl” but those days I fangirled hard. The music of The Beatles has gotten me through everything. Their songs have brought me more joy, peace, and comfort. I can listen to them in any situation and find what I need. Here are the best lyrics from The Beatles for every and any occasion.

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

I can't say "thank you" enough to express how grateful I am for you coming into my life. You have made such a huge impact on my life. I would not be the person I am today without you and I know that you will keep inspiring me to become an even better version of myself.

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register. You might change your mind about a class you want to take and must struggle to find another class to fit in the same time period. You also have to make sure no classes clash by time. Like I said, it's a big hassle.

This semester, I was waitlisted for two classes. Most people in this situation, especially first years, freak out because they don't know what to do. Here is what you should do when this happens.
