Brownies made from scratch are definitely the best, but sometimes there isn't enough time or enough money to buy all the ingredients necessary. With just a few tiny switches in the recipe, you can make brownie mix brownies taste like they didn't come out of a box. You'll fool everyone. Trust me, I did.
Ingredients:
Betty Crocker Fudge Brownie Mix (or any brownie mix, but this one worked especially well!)
2 eggs
2/3 cup of liquid coconut oil
1/4 cup water
1/3 cup unsweetened shredded coconut (optional)
Any other goodies you want in there
Directions:
Preheat oven to 350°F
In one large bowl mix your brownie mix, eggs, coconut oil, water. Integrate unit batter is smooth.
Add in your additions, such as shredded coconut, chocolate chips, chopped walnuts, peanut butter, etc.
I chose to use shredded coconut to keep with the theme. Grease a baking pan with some coconut oil and spread your batter on.
Bake in oven for around 24-30 minutes.
If you want to have lighter brownies with half the calories you can always substitute the coconut oil for greek yogurt or apple sauce. You'll have to keep a closer eye on them while they are baking though because the can quickly dry out!
To test if they are ready simply stick a knife into the middle of the batch. If it comes out clean they are ready.
