Chicken is my favorite food because not only is it delicious, but it is also very versatile. Here are a few meals that I make myself for dinner that are easy enough for college students who are crunched for time, as well as those who are not the best cooks.
1. Chicken nuggets
With choice of dipping sauces, of course. They are tasty by themselves, but condiments are they key to chicken nugget success. They're an easy, quick meal if you’re crunched for time.
2. Grilled chicken and cheese
Any chicken type works, but ideally, you can use either chicken slices from the deli or chicken strips. Also, feel free to use whatever type of cheese you want. If you want a little more flavor, dip it in ranch!
3. Chicken Caesar wrap
Use any type of chicken—grilled, nugget, strips, pan-fried—anything works. Add lettuce and any other vegetables you want, shredded cheese, and some Caesar dressing.
4. Italian dressing chicken
Pour Italian dressing to cover the bottom of a pan, and cook thawed chicken breasts until it is cooked all the way through.
5. Salad with chicken
Put whatever you want in the salad, and use whatever type of chicken. I like to use either chicken nuggets cut up or the Italian dressing chicken, and I add Caesar dressing on top.
6. Chicken Alfredo
You can either make your own Alfredo sauce or just buy a jar from the store. Heat it up once your noodles are done, and put whatever kind of chicken in it. I like to fry chicken breasts in a pan with a little canola oil until cooked all the way through and add it to the pasta and sauce.
7. Chicken tacos/quesadillas
Use 4-5 chicken breasts, shred them, and cook them in a pan or crock pot. Add taco seasoning, salsa or tomato sauce. Either use a hard shell or a tortilla, and add whatever toppings you want!
8. Chicken lettuce wraps
Brown a pound of ground chicken. Once browned, add soy sauce and teriyaki sauce for taste, carrots (optional), and onions (optional). Once done, spoon it into leaves of lettuce (romaine or iceberg work well) and enjoy!
