Southern In-Law Blog

“I’m definitely not going to gain the Freshman-15” were the first words I muttered to myself as I entered the Deece, Vassar’s dining hall, for the first time at the beginning of my freshman year of college.

Little did I know that a year later I would be standing in front of my closet back home in Ecuador, repeatedly jumping while trying to pull up and fit into my “before-college” pairs of pants.

Gaining the famous Freshman-15 was actually okay; I had just surpassed one of the biggest changes I’d ever been through in my life: going to college.

I’m not going to lie; I do not regret any of the Nilda’s cookies that I put in my mouth while stressing over Chemistry formulas last year, but I do plan on teaching my freshman-year self that one can actually make better snacking choices while in college.

Here is my ultimate list of Healthy Snack Recipes for the Lively College Student.

1. Chocolate Chia Pudding:

This one is an acquired taste of mine, but after the first "what is this that I'm eating" spoonful, you'll probably become an addict of this delicious but healthy snack.

2. Microwave Chocolate Muffin w/ Peanut Butter Icing:

This deliciousness is gluten free, vegan, sugar free, and can be made in a microwave! There is almost nothing else I could ask for in life.

4. No-Bake Energy Bites:

These were a success amongst my hall-mates last year. The "No-Bake Energy Bites" will fuel your body and help your brain keep working for hours!

5. “No Mysterious-Cheese-Powder” Mac and Cheese in a Mug:

I personally don't like instant Mac and Cheese, therefore this recipe fulfills all my "gourmet pasta" midnight cravings. Doesn't this even sound delicious?

6. Individual Microwave Cherry Crisp:

Who doesn't love this kind of comfort food? What if Cherry Crisp could be made healthy? Well...here you go!

7. No-Bake Chocolate Cookies:

My friend Sarah made these the day before she crowned the Cotopaxi volcano in Ecuador. After seeing her do that, who wouldn't trust these little bundles of cocoa and pure gluten-free energy?

8. Single Serve Gooey Brownie:

Doesn't this sound like heaven in a mug? In college, mugs are basically what I serve most of my snacks on. So, if this is healthy, why not give it a try?

Every Girl Needs To Listen To 'She Used To Be Mine' By Sara Bareilles

These powerful lyrics remind us how much good is inside each of us and that sometimes we are too blinded by our imperfections to see the other side of the coin, to see all of that good.

Every Girl Needs To Listen To 'She Used To Be Mine' By Sara Bareilles

The song was sent to me late in the middle of the night. I was still awake enough to plug in my headphones and listen to it immediately. I always did this when my best friend sent me songs, never wasting a moment. She had sent a message with this one too, telling me it reminded her so much of both of us and what we have each been through in the past couple of months.

Zodiac wheel with signs and symbols surrounding a central sun against a starry sky.

What's your sign? It's one of the first questions some of us are asked when approached by someone in a bar, at a party or even when having lunch with some of our friends. Astrology, for centuries, has been one of the largest phenomenons out there. There's a reason why many magazines and newspapers have a horoscope page, and there's also a reason why almost every bookstore or library has a section dedicated completely to astrology. Many of us could just be curious about why some of us act differently than others and whom we will get along with best, and others may just want to see if their sign does, in fact, match their personality.

Being a good person does not depend on your religion or status in life, your race or skin color, political views or culture. It depends on how good you treat others.

We are all born to do something great. Whether that be to grow up and become a doctor and save the lives of thousands of people, run a marathon, win the Noble Peace Prize, or be the greatest mother or father for your own future children one day. Regardless, we are all born with a purpose. But in between birth and death lies a path that life paves for us; a path that we must fill with something that gives our lives meaning.
