I am going without a meal plan this year, so for me, that means searching for quick and reasonably healthy meals I can make in bulk without much fuss. This is my basic recipe book for this year, so hopefully, it will give you some cooking inspiration.
1. Sheet Pan Fajitas
These sheet pan fajitas only dirty one pan and use frozen vegetables, how much easier can it get! Keep it simple, or add salsa and sour cream to take it to the next level.
2. Chicken Noodle Ramen
For those nights when you are feeling a little under the weather and need a quick pick me up, transform your basic ramen packet into some chicken noodle soup. Swap out the flavor packet and water for chicken broth, and add some rotisserie chicken and veggies to make it feel homemade.
3. Fried Rice
Instead of ordering out greasy fried rice from your favorite Chinese restaurant, make this healthier version at home. Again, all it takes is some rice, some frozen veggies, an egg, and seasonings.
4. Brown Rice Salad with Spinach and Tomatoes
Salad will definitely be a staple meal for me throughout the year. This salad adds brown rice which makes it a little heartier and fulfilling from the added fiber. If you have a rice cooker like me, there is literally no cooking involved.
5. Pasta Salad
Pasta salad can be made easily in bulk for a few meals. There are a million variations but, this one with arugula, cherry tomatoes, and mozzarella sounded delicious and slightly different which is why I included it.
6. Ratatoullie
While pasta and basic tomato sauce will for sure be a staple in my diet, ratatouille is another freezable option that allows you to mix it up a little. I always like to add veggies to bulk my meals and this makes it super delicious.
7. Stuffed Pepper Soup
Stuffed peppers is one of my favorite meals of all time, but they are a lot of work. This soup version is a much easier way to get essentially the same results. Plus you can put cheese on top, what more could you ask for.
8. Broccoli Calzones
If you have not already noticed, pretty much all I eat is carbs, cheese, and veggies. I love this recipe because you can make a whole bunch in one session and freeze the rest for a night when you will not have time to cook.
9. Bean Burritos
Another recipe that calls for upfront preparation and allows you to freeze it. These burritos are really quick to defrost and heat up for a night that you really just do not have the time for anything.
10. Italian Fries
Who says french fries are not a meal, certainly not me. This meal takes some sliced potatoes and elevates them to the next level. Another delicious meal with super minimal prep, this recipe comes from the book "Mad Hungry" by Lucinda Scala Quinn.
11. Tortilla Soup
I am not usually a soup person, but I will eat pretty much anything I can add chips and cheese too. This soup can be made spicy or not and is a hearty meal that only requires one pot.
Hopefully, these recipes gave you some good inspiration for many meals to come. Keeping it simple and fuss free when cooking is always the best way to go in my opinion. Happy eating!
