The Ultimate Taco Truck

Instead of attending college I traveled. I gallivanted across six out of seven continents and discovered flavors and spices that I never knew existed. I chose to live ten different countries, ranging from India to Chile. I spent my time in these countries learning and storing information. I also may or may not have imported spices home with me. I lived with as many families as I could and became a part of their home and culture.

Being an adopted family member helped with absorbing the family secrets of traditional dishes. After five years of being a nomadic expat I finally decided to head back to the United States and make a life long dream come true. And so this is where my new chapter begins.


I quickly ran down the hallway, bruising some people in the process, and skidded into my office. No question about how many "screw you" eyes just darted my way, but it was now a part of my routine. I did this every Monday morning and sometimes Tuesday and maybe even Wednesday. Ok, I did it every single day. So what? I had other priorities than to waste all of my precious time at this soul devouring office. I was working towards accomplishing my dreams. My dreams of owning a taco truck. Yes a taco truck. My idea sounds like a hilarious attempt of financial suicide, but I know this won't fail.

My taco truck is actually a taco school bus and will serve food other than tacos. It is painted like the chicken buses in Central America; they have this psychedelic piñata feel to them. My school bus will be painted a bright red color, the kind of red you would see in a badly done horror movie. The name will be childishly written as "The Red Hot Flamingo." The slogan, "Come and obliterate your taste buds!" will be cleanly painted underneath in a light yellow color. I envision it being fun and inviting, both children and adults will begin to love it. I can picture people all over America chanting its name over and over again, like an anthem. The food is going to be organic, fresh, and homegrown. "No chemistry was done to the making of this food", will be written on all of the wrappers.

It is going to be pure magic, magic that the people can taste.

The food is going to change every week, along with the location. I will spend my days driving across The States and Canada, while making stops in any inviting city I can. In the future, I may even descend into Central and South America. The food is going to be a mix of cultures. I will blend together the spices of my beloved countries and create new flavors, while also serving traditional dishes.

My first creation to sell will be the Immortal Wolf Burrito. A supreme Mexican burrito with an extreme hot sauce created by my Thai family. I will create a food-eating contest and have people win a t-shirt that will advertise my bus and business. If you make it through a five-pound burrito with 8 ounces of extremely spicy Thai sauce, then you should definitely be immortal, hence the name idea. I will play music in different languages with a thundering rhythm and have people dance in the streets close by. It will be the ultimate taco bus. This will be guaranteed or the customers money back.


I thought about all of this throughout my workday and decided that it was time. Today was the straw that broke the camels back. I made the adult choice and marched into my boss’s office; eyes wide open, sweat slipping down my back and with the look of terror in my eyes I made a choice that I will never regret.

Let this new phase of life begin.

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots.
