Rice, Salt, Sugar, Avocado, Raw Salmon, Seaweed Paper, Rice Wine Vinegar, Soy Sauce

Great, now that you have your supplies lets start with the rice.

The Rice (Step by Step)

The Rice may be one of the most important components of great sushi, so making it the right way is crucial. When selecting your Rice look for sushi rice, or short grain rice.

Step 1:

-add these to your pot before you turn the heat on 'High'

2 cups of Water

3 1/2 tsp of Salt

2 tbsp of Sugar

3 tbsp of Rice Wine Vinegar

-bring them to a slow boil

Step 2:

-add

1 cup of Rice

-after you've added your Rice, set the heat low enough to steadily simmer the Rice for approximately 20 minutes

Step 3:

Turn off the heat, and let the Rice sit for approximately 10 minutes

Step 4 (optional):

-place the Rice in the refrigerator until it has been chilled

While the Rice is cooking, it can be helpful to prepare some of the other components such as the Raw Salmon, the Cream Cheese, and the Avocado.

The Raw Salmon, the Cream Cheese, and the Avocado

*use caution when handling knives

Step 1:

Cut each component into long rectangular strips.

-cut them to your desired thickness, or cut them to be the approximate dimensions: 0.5" x 0.5" x 6" (eyeball it, it doesn't need to be exact)

Step 2:

Separate the component into 3 piles.

Alright, you have now prepared everything you need to start assembling your Philadelphia Roll. Now let's go over how to put it all together.

Assembling the Philadelphia Roll

Step 1:

Wrap your Rolling Mat (or towel) in Saran Wrap to keep it clean, and place it in front of you with the lines running horizontally.

Step 2:

Place 2 or so handfuls of Rice onto the Rolling Mat and flatten it down so that it makes a horizontal rectangle slightly larger than a piece of Seaweed Paper.

-approximately 1/4" thick

Step 3:

Place a piece of Seaweed Paper centered on the flattened Rice.

Step 4:

Horizontally align the strips of Raw Salmon, Cream Cheese, and Avocado in the center of the Seaweed Paper so that they extend the whole length of the Seaweed Paper.

-make sure each component overlaps so that you can taste it all in each bite

-change proportions of each component to suit your palette

***OKAY HERE COMES THE HARD PART***

The ROLL

Step 5:

With the Rolling Mat horizontally roll the contents into a long cylindrical roll.

-guide the closest edge of the rice over and to the opposite side of the components, then follow through with the roll

Step 6:

-Lay the roll on the Cutting Board with the seam facing downward

Place the Rolling Mat over the roll, and square it up by adding pressure to the sides and the top of the roll.

Use your hand, or the knife to square up the ends of the roll so that they are flush to the Rolling Mat.

Step 7:

Cut your roll perpendicularly into bite-sized pieces.

-before each cut, wet your knife using water so that it doesn't pull the roll apart

-usually, chefs will cut rolls into 6 to 8 pieces

Step 8:

Place your roll on a plate and serve it with a side of Soy Sauce.

Now Go and Enjoy Your Sushi,

HAPPY THANKSGIVING!

Every Girl Needs To Listen To 'She Used To Be Mine' By Sara Bareilles

These powerful lyrics remind us how much good is inside each of us and that sometimes we are too blinded by our imperfections to see the other side of the coin, to see all of that good.

Every Girl Needs To Listen To 'She Used To Be Mine' By Sara Bareilles

The song was sent to me late in the middle of the night. I was still awake enough to plug in my headphones and listen to it immediately. I always did this when my best friend sent me songs, never wasting a moment. She had sent a message with this one too, telling me it reminded her so much of both of us and what we have each been through in the past couple of months.

Zodiac wheel with signs and symbols surrounding a central sun against a starry sky.

What's your sign? It's one of the first questions some of us are asked when approached by someone in a bar, at a party or even when having lunch with some of our friends. Astrology, for centuries, has been one of the largest phenomenons out there. There's a reason why many magazines and newspapers have a horoscope page, and there's also a reason why almost every bookstore or library has a section dedicated completely to astrology. Many of us could just be curious about why some of us act differently than others and whom we will get along with best, and others may just want to see if their sign does, in fact, match their personality.

Being a good person does not depend on your religion or status in life, your race or skin color, political views or culture. It depends on how good you treat others.

We are all born to do something great. Whether that be to grow up and become a doctor and save the lives of thousands of people, run a marathon, win the Noble Peace Prize, or be the greatest mother or father for your own future children one day. Regardless, we are all born with a purpose. But in between birth and death lies a path that life paves for us; a path that we must fill with something that gives our lives meaning.
