Friendsgiving is an important time of year for college students, and we cherish every single one. We get to take a night (or five) to just relax, spend time with our friends and eat delicious food. And although making an entire turkey is a little ambitious, there are definitely dishes easy enough that you can make to help make your celebration feel just as (if not more) homey as real Thanksgiving. Here are six recipes (enough for five people and leftovers) to make your Friendsgiving cooking a reason for people to come back every year:

1. Pigs in a Blanket

- 2 rolls of Pillsbury biscuit dough (each has 8)

- 48 mini-sausages

- 24 strips of bacon cut in half

-½ cup of shredded cheddar

  1. Preheat oven to 350 degrees
  2. Cut each biscuit into 3 vertical strips
  3. Wrap each mini sausage in half a strip of bacon
  4. Wrap mini sausage/bacon with a biscuit strip
  5. Keep the bacon and biscuit in place with a toothpick
  6. Bake in oven for 9 minutes
  7. Take out, sprinkle cheddar
  8. Place back in oven for another 3 minutes

2. Cheesy Mashed Potatoes

- 8 large potatoes

-3 tablespoons of butter

-½ cup of warm milk

-¾ cup shredded cheese

  1. In a large pot, bring 6 cups of salted water to a boil.
  2. Wash and peel, then cut off any eyes on the potatoes
  3. Add potatoes, and let them boil for 15 minutes on low/medium heat
  4. Drain potatoes of water
  5. Add butter and warm milk before mashing
  6. Stir in shredded cheese once the potatoes become creamy

3. Stuffing

- 1 stick butter

- 2 cups diced onions

- 2 cups diced celery

- 2 chopped apples

- 1 tablespoon sage

- 1 tablespoon thyme

- 3 cups chicken broth

- 2 eggs

- ¼ cup chopped parsley

- 16 cups chopped white bread

  1. Preheat oven to 375 degrees
  2. In a large skillet over medium heat, melt the butter and then add the onions, celery, apples, sage, thyme and salt/pepper to season, and cook for five minutes
  3. Add the chicken broth
  4. In a bowl, mix eggs, parsley and bread and then pour into the skillet with the vegetables and broth
  5. Pour everything into a baking dish, and then cover and bake for 30 minutes
  6. Take out the baking dish from the oven, uncover it and then bake for another 20 minutes

4. Stuffed Manicotti

- 1 box of Manicotti pasta

- 1 jar of spaghetti sauce

- 1 pint Ricotta cheese

- 8 oz shredded Mozzarella cheese

- ¾ cups Parmesan cheese

- 2 eggs

- ½ teaspoon of salt

- ½ teaspoon pepper

- 1 cup of ground beef or sausage, sautƩed until done (optional)

  1. Preheat oven to 350 degrees
  2. Boil water, then add manicotti pasta
  3. When done, drain the pasta and then rinse in cold water
  4. In a bowl, combine the ricotta/mozzarella/parmesan cheeses, the eggs, salt, and pepper (and cooked ground beef/sausage)
  5. Fill each manicotti pasta shell with the cheese mixture
  6. In a large baking pan, spread out ½ cup of spaghetti sauce and lay the stuffed pasta on top
  7. Pour sauce over the top of the shells, and add Parmesan on top
  8. Bake in the oven for 45 minutes

5. Pumpkin Pie


- 1 can pumpkin

- 1 can sweetened condensed milk

- 2 large eggs

- 1 teaspoon ground cinnamon

- ½ teaspoon ground ginger

- ½ teaspoon ground nutmeg

- ½ teaspoon salt

- 1 (9 inch) unbaked pie crust

- Whipped cream

  1. Preheat oven to 425 degrees
  2. Mix pumpkin, sweetened condensed milk, eggs, spices, and salt until smooth
  3. Pour the mixture into the unbaked pie crust and bake for 15 minutes
  4. After 15 minutes, turn the oven temperature down to 350 degrees, and continue to bake for 35-40 minutes
  5. After you take the pie out of the oven and let it cool, add whipped cream

6. Coffee Cake


For Base

  • 2 cups all purpose flour
  • ¾ cup white sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup butter
  • 1 egg
  • ¾ cups milk
  • 1 ½ teaspoons vanilla extract

For Topping

  • ¼ cup all purpose flour
  • ā…” cup sugar
  • 1 teaspoon ground cinnamon
  • ¼ cup butter
  1. Preheat oven to 350 degrees and grease/flour a 9x13 inch pan
  2. In a large bowl, mix flour, sugar, baking powder and salt
  3. Cut in butter until mixture is crumbly
  4. In a separate bowl, combine egg, milk, and vanilla and then pour into crumb mixture
  5. Spread into pan
  6. In a bowl, add flour, sugar, and cinnamon, and cut in butter again
  7. Add on top of the base mixture in pan, spread evenly
  8. Bake for 25 to 30 minutes
