An article on the happiest day of my life.

When it came to writing my article for this week, there was clearly only one thing to talk about: my engagement! On Friday night I went from being simply someone with a boyfriend to someone with a fiancé. I don’t think the initial shock and excitement has worn off yet, which I am okay with. I’m happy to relish in this exciting time.

It came as a complete shock and I was expecting anything but an engagement. However, I was more than ready to say yes anytime he asked me. It was rather cute how he did it and I give him major props for pulling it all off. It happened on his birthday – which was one day after our nine month anniversary. He had asked beforehand if we could cook dinner together and have it by candlelight. Oblivious me was all for it and figured it was just going to be an average, romantic dinner at home.

We cooked our dinner – stuffed chicken parmesan to be exact – and lit the candles. To set the mood, music was playing in the background and soon our song came on. I smiled, thinking that it was cute. As I grabbed my fork and knife to cut into the chicken, he dropped his napkin under the table. At this point, my mind was on the chicken in front of me. After all, it was stuffed chicken! My exact words as he fumbled in the floor over this napkin was, “Mmmm, I’m so ready to eat this chicken!”

This is when I noticed he slid the chair aside and I glanced over. And there was this handsome man, down on one knee with a black box in his hand. The ring shimmered in the light and all I could mutter out was, “Really?” through the tears of happiness. He then asked, oh so eloquently, “So, you gonna marry me?” It was after this point that the tears were really flowing and I managed a muffled “yes” as I stuck my hand out to have the ring be put on. And it was so beautiful! I couldn’t have picked a more perfect ring if I had designed it myself.

The rest of the evening was spent calling and announcing the news, momentary freak outs, and just being in awe. I can say that it was by far the happiest moment of my life so far. Matthew did so amazing and was sure to speak with my parents beforehand to get the blessing. I couldn’t think of a better person to spend the rest of my life with; I’ve been truly blessed and given such an amazing gift. I always said that I’d need to find the perfect man before I got married and I am convinced that is exactly what I have.

There’s still so much planning, organizing, and stressing to be had. But I know it’s going to be an amazing journey. I still have to graduate, find a fulltime job, and buy a house. So, it’s not likely that the wedding will be in the next little bit, but I know it will happen exactly when it’s supposed to. As I sit in awe at this extraordinary event, there’s one Bible verse that keeps coming to me: Our mouths were filled with laughter, our tongues with songs of joy. Then it was said among the nations, "The Lord has done great things for them." – Psalms 126:2

And He certainly has been so good to us and I know He will continue to be.

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

I can't say "thank you" enough to express how grateful I am for you coming into my life. You have made such a huge impact on my life. I would not be the person I am today without you and I know that you will keep inspiring me to become an even better version of myself.

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register. You might change your mind about a class you want to take and must struggle to find another class to fit in the same time period. You also have to make sure no classes clash by time. Like I said, it's a big hassle.

This semester, I was waitlisted for two classes. Most people in this situation, especially first years, freak out because they don't know what to do. Here is what you should do when this happens.

Challah vs. Easter Bread: A Delicious Dilemma

Is there really such a difference in Challah bread or Easter Bread?

Ever since I could remember, it was a treat to receive Easter Bread made by my grandmother. We would only have it once a year and the wait was excruciating. Now that my grandmother has gotten older, she has stopped baking a lot of her recipes that require a lot of hand usage--her traditional Italian baking means no machines. So for the past few years, I have missed enjoying my Easter Bread.
