Since it is now Winter Break (finally), that means that I am officially done with my first semester at the University of Tennessee at Chattanooga. For those who don't know, I transferred to UTC at the beginning of last semester. There are several things that I have learned during this semester.

When I first moved to Chattanooga, I knew zero people. But that turned into an advantage for me. I have met some of the nicest people in the entire world since moving. They are the ones responsible for keeping me sane with long talks and Starbucks coffee dates.

I have also learned that I am stronger than I have ever known. I am such a family person and it was really difficult for me to adjust to living without my family right here with me. But I quickly learned to stand on my own two feet and that I am strong and smart enough to provide for myself. There is not a lot in this world that I can not do if I put my mind to it.

I am at UTC to learn, and I have learned quite a bit when it comes to my degree, Political Science: Legal Studies. I have learned that there are things that I still need to learn, and that is a good thing. But I have also learned that I really do have a special passion for my degree. I am so ready to move into upper-level courses so that I can just focus on classes relating to my degree.

I will tell you one thing, Chattanooga is a beautiful city and I love that I am now able to call it my second home. If you ever get the chance to go and explore the city, you need to go. There is something for everyone whether you are a city person or you are more into the country.

So to round everything up, my first semester at the University of Tennessee at Chattanooga was amazing, and I cannot wait to see what next semester brings.

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

I can't say "thank you" enough to express how grateful I am for you coming into my life. You have made such a huge impact on my life. I would not be the person I am today without you and I know that you will keep inspiring me to become an even better version of myself.

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register. You might change your mind about a class you want to take and must struggle to find another class to fit in the same time period. You also have to make sure no classes clash by time. Like I said, it's a big hassle.

This semester, I was waitlisted for two classes. Most people in this situation, especially first years, freak out because they don't know what to do. Here is what you should do when this happens.

Challah vs. Easter Bread: A Delicious Dilemma

Is there really such a difference in Challah bread or Easter Bread?

Ever since I could remember, it was a treat to receive Easter Bread made by my grandmother. We would only have it once a year and the wait was excruciating. Now that my grandmother has gotten older, she has stopped baking a lot of her recipes that require a lot of hand usage--her traditional Italian baking means no machines. So for the past few years, I have missed enjoying my Easter Bread.
