Pringles. Macaroni. Fried Oreos. The list of my favorite foods can go on forever, but it doesn’t take long to tell that they all have one thing in common: they are all UNHEALTHY. If it were up to me, my favorites would be all the veggies and fruits in the world, but unfortunately, my taste buds tell me otherwise. Every semester, I give myself the good ole “New Year new me” speech and drag myself to the salad bar, but the greasy foods somehow find their way back into my stomach. But this year, I knew something would have to change. I am living in my own apartment like a real adult (yikes), and I can’t just rely on the rare dining hall salad. I thought converting to a healthy eater would be hard, but I had my new and beloved friend by my side to help me through it.
My new friend is reliable, flexible, versatile and green! Green, you may ask? Is my new friend Elphaba, the wicked witch of the west? No, (but sometimes I wish). It’s kale! I know what you might be thinking: “Yeah yeah, the overrated super food that’s loaded with protein and a chock-full of vitamins. This is nothing new to us.” Of course I’ve heard of kale and all of its benefits before, but I've never actually went out of my way to make it tasty, yet alone become one of those girls who raves about it. Instead of me rambling on about how delicious and healthy it is (which could be hours), here are three recipes to start you on the kale journey you never thought you needed.
