These quick, easy, and healthy recipes can help you become healthier and happier this semester!

1. Salmon Avocado BLT

What you'll need:

-Your favorite type of bread

- Bacon

-Lettuce

-Tomato

- 1/2 Avocado

-5 oz of Salmon

Cook bacon and salmon. Toast bread, slice avocado and tomato and assemble sandwich.

2. Berry Greek Yogurt Parfait

What you'll need:

-1 cup Vanilla Greek Yogurt

-1/2 cup of your favorite berries

-1/2 cup of granola

Combine all ingredients and enjoy!

3. Fried Zucchini

What you'll need:

-1 large zucchini

-Butter

-1 cup of flour

-2 eggs, beaten

-1 cup of crushed oyster crackers

Cut or slice zucchini. Take pieces and cover in flour. Then coat pieces in eggs, finally moving the pieces into crushed oyster crackers. Coat frying pan with butter and fry until zucchini pieces are soft and coating is crunchy.

4. Teriyaki Chicken Lettuce Wraps

What you'll need:

-1 lb chicken breasts, diced

-2 tbsp avocado oil

-1/2 cup light soy sauce

-2 tbsp water

-1 tbsp raw honey

-1 tbsp cornstarch

-1 cup diced green onions

-1 fresh minced garlic clove

-8oz chopped mushrooms

-1 cup grated carrots

-1 head of romaine lettuce

Cook chicken with oil. In a separate pan, mix soy sauce, water, cornstarch, and honey. Add garlic, mushrooms, carrots, and sautƩ for five minutes. Mix all ingredients. Serve in lettuce leaves.

5. Nutella Bites

What you'll need:

-2 cups oats

-1 1/4 cups Nutella

-1/4 cup Agave Nectar

-1/2 cup chopped Hazelnuts

-1/4 cup Flaxseed

-1/2 cup Coconut Flakes

Combine all ingredients into one bowl. Mix thoroughly, form into bite-sized balls, and chill.

6. Eggs and Avocado Toast

What you'll need:

-Two Eggs

-1/2 an Avocado

- Your favorite type of bread

-Salt and Pepper

Cook eggs in your favorite way (scrambled, poached, sunny-side up). Toast bread, slice avocado, and place on top of toast.

7. Chicken Noodle Soup

What you'll need:

-1 Rotisserie Chicken

-Noodles

-2 quarts of low sodium chicken broth

-A variety of your favorite veggies

-Your favorite spices


Pick meat off of chicken and set aside. Pour broth and chopped veggies into the pot. Cook until veggies are soft. Add in chicken and spices and simmer.

8. Strawberry Chocolate Almond AcaĆ­ Bowls

What you'll need:

-2 cups frozen berries

-1/2 tsp almond extract

-1 frozen banana

-1 handful of spinach or kale

-1 cup of almond milk

-1 tsp acai powder

-2 tbsp honey


-1 cup sliced strawberries

-1 cup sliced chocolate covered nuts

-1 sliced banana

- A handful of Goji Berries

-A drizzle of Honey

Blend first seven ingredients. Pour into a bowl and cover with final five ingredients.
