Guac 101

Alright guys, I'm going to let you in on a little secret. Guacamole. You love it. Everyone loves it and sometimes driving to Chipotle to pay $1.80 for it is just not going to happen. Here is where the secret comes in: it is really easy to make. 

The only out of the way ingredient you need is an avocado, but with Fresh City Market open on campus, you can just buy a few and use them when they are ripe. How do you know if an avocado is ready? Squeeze it gently and it should give a little, then return to place. So if you want to make guac in a few days, buy a firm avocado and let it sit.

If you live in you're probably thinking, OMG I can't cook in the house. On the contrary, assuming you have a salad bar, your life just got easier. Pre-chopped tomatoes and onion are in your vicinity. 

You need the following three main ingredients: avocado, tomato and onion. You can to add the following, as you choose: salt, black pepper, crushed red pepper or chopped jalapenos, fresh lime juice, fresh cilantro and garlic powder.

Here's what you do. Cut the avocado lengthwise -- if you're a visual person, hotdog, not hamburger -- around the pit; then twist the sides opposite directions. Use a spoon to scrap out the pit, then the avocado meat. Throw in everything else, above, that you have. Mash with a fork. Done. So easy.

A few notes on ingredients -- like onion? Put in a lot. Hate tomatoes? Don't put in any. I love spicy, so add a ton of crushed red pepper. If you don't like spicy, omit that. The lime juice not only adds a tang, but the acidity of the citrus also prevents the guac from oxidizing and turning brown. That will happen either way, so plan to eat this sooner, rather than later. If you want to get on Chipotle's level, you are going to need the cilantro, but I figured most of you guys don't care that much. The salt, garlic and pepper are just there to add some flavor complexity, if that's your thing. I recommend adding pepper since I know you probably have it.

This tastes better when you leave it in the fridge for half an hour, or so. If you are one of those strange people with self control, you could try that. You can't really mess this up, guys. I promise.
