Picture this: it's the Monday after midterms, which also means it's the beginning of spring break, and you've found yourself awake before noon. There's no better way to reward yourself than with a kickin' breakfast! Spring is the best season to cook in, especially in Florida where we've got a mix of winter and spring crops still growing strong, like strawberries, spinach, grapefruit, and cucumber. Spring break provides the perfect opportunity to use these fresh fruits and vegetables, and get yourself out of bed in the morning! Here are a few of my favorite Spring break recipes:
1. Cream Cheese Strawberry French Toast
If you loved French toast, but want something a little fancier, then look no further! Cream cheese, strawberries, bread; a great way to start your day over break!
2. Nutella Mini Pancake Kabobs
Maybe cream cheese isn't your style, or maybe you're looking for something a little more fun. Either way, you've found a perfect recipe in this perfect combination of Nutella, pancakes, strawberries, and bananas. Mix it up by adding in your own ingredients, like peanut butter, mango, apples; whatever makes you happy!
3. Gluten-free Lemon Poppy Seed Muffins
If your childhood was anything like mine, you woke up on Sunday mornings to the smell of something amazing in the oven. More often than not in my house, blueberry muffins were the cause of this. As I got older, I decided that muffins were not just for Sundays, and blueberry was not the only flavor. These lemon poppy seed muffins are great for any morning, and taste delicious! The gluten-free recipe calls for ingredients you might not normally have stocked in your kitchen, specifically almond flour, and gluten-free baking flour, so make sure you're prepared before making these muffins.
4. Bisquick Battered Fruit Rings
Just looking at these pictures makes my mouth water! Pancakes are great by themselves, but stuffed with fruit raises the bar even higher. Apples and pineapples work great, but I love making small battered strawberries as well.
5. Dark Cherry Lime Slushy
Maybe big breakfasts aren't your style, but that doesn't mean you can't start off your morning with a little taste of spring! This slushy is vegan and calls for Medjool dates, flax or chia seeds, and almond or cashew butter, so make sure you have this on hand or make this slushy your own! Dark cherries are juicy, delicious, and a great way to stay cool when your spring break heats up.
6. Blueberry Breakfast Grilled Cheese
Grilled cheese is a staple of my diet, and I love to work it into my meal anyway that I can, at any time of the day. This blueberry grilled cheese is something I would have every day if I could! Cream cheese and blueberries create the perfect filling, and a little bit of crunch from the toasted bread makes this dish irresistible.
7. Blueberry Crisp Parfait
While we're on the topic of blueberries, this blueberry parfait creates a light and simple breakfast. Honey and vanilla add a bit of sweetness to the yogurt, and the granola provides a nice crunch. This is great for breakfast, and makes for a perfect snack as well!
8. Turkey and Cheese Crescent Rolls
Okay, maybe fruit isn't really your forte. There are still lots of springtime breakfasts without fruit, like these turkey and cheese rolls! My sister is a pretty picky eater, but she never turns these down. These take only three simple ingredients and, like many other recipes on this list, can be modified to fit whatever your taste! Ham, bacon, Swiss cheese or pepper jack, make these filled-crescent rolls the reason you get up early on your week off!
9. Hash Brown Egg Nests with Avocado
I have been making this recipe for over two years, and I swear by it. These little egg nests are as good as a full breakfast all wrapped up into a cupcake tin. Not only are they great fresh, but they freeze really well too and make for an awesome breakfast or snack when you're low on time, but want something filling. The avocado is my favorite part, and I love to add a bit of salsa on top of mine.
10. Peanut Butter, Banana, and Honey Roll Up
SImple? Yes. Delicious? Of course! I love to throw these together on days I know I'm going to have to be up early. During spring break, my sisters and I go to the beach, go hiking, and go kayaking, which means we have to be up and out the door pretty early to avoid the heat. These wraps are great to eat on the go, and also make a great snack for these particularly active days.
Of course, you don't have to get up early just to make these stellar meals. Breakfast time is any time you make it! Besides, spring break is for sleeping in all day.
