The 10 Minute Post-Semester Breakfast Sandwich

Classes are over and so is your meal plan, so what are you going to eat now that the dining hall is no longer an option? Have no idea how to cook? No problem! Here’s the easiest breakfast (or lunch, or dinner…) sandwich you can make in 10 minutes flat!

Step 1: Chop Some Vegetables

Yes, I said vegetables! Remember all the times you poked away that terrible steamed broccoli from the dining hall? Now is the time for making up for lost vitamins and nutrients! Use whatever you have or whatever sounds good; I happened to just have a bell pepper and some onions so I chopped up about a half a cup of each here.

Step 2: Sauté!

Just like the weather, things are heating up! I started heating up the pan, and then added a bit of olive oil and a bit of butter. (About a tablespoon of each.) I waited until the butter was bubbling and then I added my onions and peppers. Finally, sauté until you start seeing some color on the peppers, that way they’ll be nice and soft when you bite into your sandwich.

Step 3: Add your eggs and scramble

Here in this terribly blurry action shot, I’ve already added two eggs, although one might have worked just as well. I’m not a chef of any sort, so I tend to simply crack the eggs into the pan with my vegetables and whack them around with a spatula until they're scrambled. Think about it like you're moving your spatula just as fast as you had to move your pen to finish those final exams on time, and your eggs will turn out just fine. Then, just before the eggs are fully cooked, add a huge handful of cheese, as well as some salt and pepper to taste for some extra flavor.

Step 4: Spoon your eggs onto a bagel, add some extra toppings

I toasted up an "everything" bagel, spread some mayo on it, and then spooned as much of the eggs and veggies as it could handle. I then topped the sandwich off with some spinach for an extra health boost, and then was ready for the all important final step.

Step 5: Enjoy!

Just because the dining hall is out of your life doesn't mean you have to skimp out on a real meal. You have just made yourself an easy, healthy, and delicious breakfast sandwich in under 10 minutes. Now pat yourself on the back, enjoy a good breakfast, and go out and celebrate the start of summer! (After cleaning up the dishes that is...)
