So, What CAN You Eat?

Being vegan, I get this question way more often than I care to answer.

Just recently going vegan, I get the same questions every time someone questions why I'm ordering something without animals products. "Why?" and "So, what can you eat?"

To the first question, do I ask you why you chose to not be vegan? No. It makes me feel better, and animal agriculture is killing our environment. I'm not going to shove my beliefs down your throat, so please stop trying to shove cheese down mine.

To the second question, if you followed my vegan Instagram..you would know. But you don't! So here are a few things (out of the many things) that I eat:


1. I eat peanut butter and jellies like it's my job.

Easiest breakfast ever, which is another reason its my favorite.

2. I went out to dinner and got soy ginger broccoli and tofu


...fried tofu.

3. I make huge dinner bowls.

Yellow rice, avocado, tomato and hummus all over a bed of spinach is one of my faves. wowow.

4. Moes. OK???? A bowl with lettuce, tomato, jalepenos, olives, salsa, cucumber, and guac.

Literally shoved the whole thing in my mouth.

5. Veggie gyoza.

Stupid good.

6. Paninis.

Black olives, roasted red peppers, artichokes, sundried tomato, and arugula.

7. Smoothies.

I literally never stop with the smoothies.

8. Pasta.


SO MUCH PASTA.

9. Rice, corn, red cabbage, snap peas.

Trust me, this will keep you full for hours! Also I added some hot sauce because who doesn't love something spicy? It took literally 30 minutes to make — so easy!

10. Pizza.

Yeah, pizza. Vegan cheese, artichokes, olives, jalepenos, roasted tomatoes and sauce.

11. Ice cream.

Being a baby vegan i was craving ice cream and found this in the supermarket today. SO good. It was just as silky as dairy ice cream, and had a hint of coconut. 10/10 would recommend.


These are only some of the things I eat during the week. This doesn't include all of the veggies and fruits I can eat, and all of the amazing combinations to make with them! I can eat so many things, I just have to get creative. And I feel so good about eating it! Follow my vegan Instagram for all of the things I eat! @Veganeaaaats

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register. You might change your mind about a class you want to take and must struggle to find another class to fit in the same time period. You also have to make sure no classes clash by time. Like I said, it's a big hassle.

This semester, I was waitlisted for two classes. Most people in this situation, especially first years, freak out because they don't know what to do. Here is what you should do when this happens.
