If you're not in the mood for candy, try out these recipes!
1. Homemade Twix Bars (The Organic Dietitian)
Ingredients:
Shortbread Cookie
6 tablespoons coconut flour
4 tablespoons softened coconut oil
1 tablespoon raw honey or pure maple syrup
Caramel
10-12 large, softs dates (seeds removed)
Chocolate
6 ounces melted chocolate chips
Instructions:
1. Preheat oven to 350 degrees.
2. In a small bowl mix together the shortbread cookie ingredients to form a dough.
3. Press the dough into an 8x4 rectangle on a lined baking sheet. Dough should be about 1/2 inch thick.
4. Bake in the oven for 10-15 minutes until edges are golden brown. Let cool for 5 minutes.
5. For the caramel, add the dates to a food processor and process until a paste is formed, scraping down the sides as needed.
6. Spread the date caramel evenly over the cooled shortbread cookie and store in the freezer for about 30 minutes.
7. Cut into 12 bars and coat with melted chocolate (I melted mine in a bowl over a pot of boiling water).
8. Allow to set on a lined baking sheet in the fridge for about 30 minutes.
9. Store in an airtight container for up to one week.
2. Candy Skull Crushers
Ingredients:
White Chocolate Coating
120ml (1/2 cup) coconut oil
75g (1/2 cup) cashew nuts
1 tbsp raw agave nectar or sweetener of choice
1 tsp vanilla extract
1 tbsp raw almond milk or milk of choice
Berry Filling
30g (1/4 cup) goji berries
35g (1/4 cup) fresh blackberries (can be substituted with other berries)
30g (1/4 cup) cashew nuts
2 tbsp raw almond milk or milk of choice
1 tsp vanilla extract
Instructions:
1. To make the "white chocolate" coating, mix all ingredients in a blender or food processor until completely smooth. Add a tiny bit more milk if it's hard to blend.
2. Make the berry filling by separately mixing all ingredients in a blender or food processor until smooth and resembles a thick sauce.
3. Fill your mold up to about ⅓ way with the white chocolate and freeze for a few minutes. (Should only take about 10 minutes for it to firm up.)
4. Then spoon in about ½ tsp full of the berry filling, keeping it in the center of the mold. And freeze for a further 10 minutes.
5. Now fill up to the top with the white chocolate and freeze or refrigerate to set for at least 30 minutes.
6. Keep in the fridge or freezer so it will keep a nice solid texture. Will be fine at room temperature for about 15 minutes before it softens.
