Everyone loves a good Christmas cookie, but most of us hate the calories that come with it. Christmas is the time of the year where yummy treats make their grand entrance, and baking is a weekly event. Here are some Christmas treats that won't make you feel guilty this holiday season.
Blueberry and White Chocolate Ginger Cookies
1 cup of flour
1/2 tsp baking soda
1/2 tsp salt
1/4 cup wheat germ
1 large egg
1/4 tsp ground ginger
3/4 cup brown sugar
1/3 cup canola oil
1 tsp vanilla extract
2 ounces of chopped white chocolate chips
1/2 cup of old-fashioned oats
1/3 cup of dried blueberries
1/4 cup of crystallized ginger (topping)
1. Preheat oven to 375
2. Whisk flour, wheat germ, baking soda, salt and ground ginger in a small bowl, then whisk egg, brown sugar, oil and vanilla in a large bowl. Add the dry ingredients to the wet ingredients and stir.
3. Combine the oats, chocolate, blueberries, and crystallized ginger then stir.
4. Place the dough on un-greased baking sheets.
5. Bake in the oven for about 8 to 10 minutes.

1/2 cup of unsalted butter
2/3 cup of granulated sugar
1 tsp vanilla extract
2 large eggs
1 cup of pastry flour (may be whole wheat)
2 tbsp canola oil
6 tbsp cocoa powder
1/2 tsp espresso powder (optional)
1. Preheat a waffle iron.
2. First beat the butter and sugar, then combine the rest of the ingredients in a bowl and mix.
3. Drop the batter into the un-greased waffle iron.
4. Once the waffle iron has completed heating the mixture, top the cookie with confectioner's sugar or drizzle with melted chocolate.
Gingerbread Cookie Dough Bites
1 cup of all-purpose flour
1.5 tsp of ground ginger
1 tbsp of melted butter
1/8 tsp of salt
2 tbsp of unsweetened applesauce
2 tbsp of molasses
6 tbsp brown sugar
1/2 tsp of vanilla extract
1. Whisk the flour, ginger, and salt in a small bowl. Combine the butter, molasses, vanilla, and applesauce in a larger bowl. Then mix in the brown sugar and flour.
2. Cover the dough with plastic wrap and chill for an hour.
3. Roll the dough into little balls, then place on wax paper and refrigerate until ready to eat.
