When I think of home, I don't recall memories of Holidays, or family movie nights, I think of food. Home was where my love for food began, and where I realized that I wanted to become a chef and restaurateur.

When my mom stayed at home, she would have my brother and I hang out in the kitchen with her, as that was where she spent most of her time. My first memory of food was stirring brownie batter in the kitchen with my mom (aka the picture above).

However; the one comfort food that reminds me the most of home is banana bread. My mom, brother, and I would make it all the time, mashing the bananas and personally grinding the flour. The cookbook with the recipe in it is destroyed, worn, and covered in flour, dried liquids, and spices.

I would eat the bread for breakfast, lunch, or anytime in between. It was a dish that brought us together, and we bonded while we made it, and while we ate it!

Now that I am away at school, I don't always have the luxury of being able to go home whenever I please. I often make banana bread because it reminds me of home, and doesn't require me to travel. So, if you're like me and want a taste of home in your college apartment, make this simple and easy banana bread.

HAPPY BAKING FRIENDS!!!!!

Banana Bread

1 3/4 cups flour

1 teaspoon cinnamon

2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 cup oil

1/2 cup honey

3/4 teaspoon vanilla

1 egg

1 cup mashed banana

1/2 cup nuts

Combine dry ingredients. Stir in liquids and nuts. Mix well. Pour into greased 9"x5" pan. Bake at 350 degrees for 45-50 minutes. Cool 10 minutes. Yields one loaf.
