Who would have thought that a little cherry on a tree in different parts of the world could be broken open, roasted, ground up and seeped to make this delicious drink over half of the world obsesses over? Crazy. If you haven’t jumped on board yet, you may be crazy.
For Isaac and Bailey Reynolds coffee is more than just a daily consumed drink, but a hobby and a business. Founders of the roasting company Black Rabbit Coffee in Hillsboro, Illinois, they began in August of 2015 when they purchased their first roaster, this has been Isaac’s dream since he lived in Guatemala over five years ago. Living there for 10 years of his life, he was always learning something new while being in one of the best coffee growing regions in the world. This also helped him develop a true understanding and taste for good versus bad coffee. “It just really fits my personality,” Issac said. “It’s (roasting) half palate, half study.” Two things in which he enjoys.
They are always searching for the finest beans and have a growing list of regions they roast from. Some of their single origins include Guatemalan, Costa Rican, Kenyan, Sumatran and Colombian. They also have their signature blend, the Buna Blend and their own espresso blend. "The most popular right now is probably the Buna Blend,” co-founder Bailey Reynolds said. "But the Kenyan fans are die hard, as soon as it’s roasted some people are wanting five bags at a time.” Never roasting anything dark, they assure that the roast puts emphasis on the notes within each bean.
"The thing is there is other great coffee out there, but our aim is to give you a good cup of coffee for an affordable price." That is one of their goals that has already clearly been achieved as local customers are thrilled to receive quality, fresh coffee without traveling to do so. Hillsboro customer Kristen Lee left a great review. "We've had lots of coffee at lots of high end shops in Nashville, Chicago, Portland, St. Louis and everywhere we go and these guys jump right in at the top level with those places. Now I can drink fresh high end coffee daily instead of only when I've recently been to St. Louis or Chicago. Super grateful for these guys being in Hillsboro! Not to mention the MUCH lower prices than the city!”
