3 Fall Soup Recipes To Help Kick Off The Cozy Season

There's nothing more comforting than a hot bowl of delicious soup on a cold fall day.

1. Mac n Cheese n Chicken

Ingredients:

-1 cup macaroni

-2 chicken breasts

-salt (to taste)

-black pepper (to taste)

-4 tablespoons butter

-1 onion

-1 bell pepper

-4 cups chicken stock

-4 cups whole milk

-2 teaspoons Dijon

-1 head broccoli

-1 cup sharp cheddar

-chives (for garnish)

Instructions:

1. Cook macaroni

2. Salt and pepper the chicken after cubing it. Add 1 tablespoon of butter to a large soup pot and cook chicken over medium to high heat until cooked through (around 6 to 9 minutes)

3. Reduce heat to medium and add chopped bell pepper, onion, and the rest of the butter and cook until soft. Add in flour, stir, and add chicken stock, milk, and dijon. Simmer until thick.

4. Stir in chopped broccoli and cooked macaroni. Stir in the sharp cheddar until melted. Salt and pepper to taste, and garnish with chopped chives.

2. Harvest Pumpkin

Ingredients:

-1 can pumpkin puree

-1 onion

-1 potato

-½ pint heavy cream

-4 cups chicken broth

-2 tablespoons butter

-salt (to taste)

-pepper (to taste)

-¼ teaspoon nutmeg

Instructions:

1. In a large soup pot, melt the butter over medium heat then add chopped potato and onion and cook until onions are translucent. Add broth and turn to high heat to bring it to a boil, be sure to cover with a lid. Once at a boil, turn heat to low and simmer until potatoes are cooked through.

2. Add pumpkin puree and stir in until smooth. Stir in nutmeg, add salt and pepper to taste. Turn heat to medium and add boil again. Once boiling, reduce heat to low and add heavy cream until smooth.

3. Chicken Gnocchi

Ingredients:

-1 and ¼ cup potato gnocchi

-1 chicken breast (cut up and coked)

-1 tomato

-½ onion

-½ cup corn

-1 green onion

-1 cup broccoli

-½ teaspoon dried thyme

-3 cups water

-salt (to taste)

-pepper (to taste)

Instructions:

1. Add all ingredients to a large soup pot simultaneously and bring to a boil

2. Once at a boil, reduce heat to low and let simmer to allow gnocchi to cook completely

3. Simmer for 15 minutes
