Almost everyone sets a goal for the new year to be healthier than the last. Whether that goal is actually achieved or not, the buzz about eating cleaner and getting in shape seems to always fill the air come January. Consequently, I have noticed that people are often intimidated or skeptical when it comes to cooking healthy foods. In my opinion, incorporating healthy alternatives into my cooking is fun and surprisingly delicious compared to a lot of bland, processed foods. If eating healthier is on your agenda for this year, here are some simple, healthy recipes that will no doubt clear your mind of any skepticism!
I am a lover of anything oatmeal, so this recipe spoke to me. With only a few ingredients, you can create the ultimate breakfast on-the-go, especially since you can freeze them to last longer. You can also add any of your favorite toppings like fresh or dried fruit, nuts, coconut, or even chocolate chips. This hearty breakfast is loaded with whole grains that will give you a burst of energy to start your day (along with your coffee, of course).
2. Banana Blueberry Oatmeal Bake
I told you I loved oatmeal. I actually made this recipe recently and it was so, so good! This recipe is perfect for using up ripe bananas, and you could also substitute the blueberries with any other berries or even apple! This warm, cozy breakfast is oh-so-comforting on those chilly mornings.
3. Layered Taco Salad with Cilantro Lime Dressing
Who said salads have to be boring? This healthy spin on the Mexican taco salad can be easily transported in a mason jar, or any other container, for a quick yet delicious lunch. Filled with power ingredients like spinach, avocado, and black beans, this recipe is protein-packed and sure to satisfy your Mexican cravings. If the vegetarian aspect scares you, feel free to add grilled chicken or ground turkey!
This low-calorie Greek-inspired wrap is protein-packed with ingredients like shredded chicken and hummus and can be easily prepared in less than 30 minutes. You could also pair it with a side salad or fresh fruit for the perfect light yet filling lunch.
Zucchini noodles or “zoodles” are my new favorite food to make. They are so fun and easy to make, with the use of a spiralizer (I got mine for about $15 at Walmart). They are also very versatile. I’ve used them in stir-fries as well as a light alternative in many pasta dishes, but this simple chicken soup recipe seemed perfect for a nice, cozy dinner during the winter months. Zucchini has much more flavor to offer than pasta or any other staple carb and is a great way to incorporate more vegetables into your diet. 6. Zoodles with Kale Pesto and Edamame
This very green recipe incorporates a healthy alternative to pesto using kale (which is less than half the calories!), and can be jarred and refrigerated for future use. With protein-rich ingredients like edamame and almonds, and kale working as a super food, this wholesome dish could serve as lunch or even a side at dinner.
Cooking healthy food can be intimidating, but I hope some of these dishes excited you as much as they did me and inspire you to venture out and explore new flavors. Getting creative with healthy foods is much more fun and rewarding than going through the drive-through, I promise!
