Let's face it, us college students are tired and lazy, especially when it comes to food. There are classes to get to and work to be done, so it makes sense that we want our meals quickly and with little effort involved on our part. Sometimes, the lines are too long, or you just don't have time to walk clear across campus to grab food.
So, if you're short on meal plan money, live off campus or just need a break from college food, then here are some easy meals for breakfast, lunch and dinner that you can prepare for yourself. These meals are great because they don't involve a lot of preparation. All you have to do is assemble the ingredients or at most, cook a little on the stove.
Breakfast
Oatmeal
This is a super easy go-to breakfast. All you need are some instant oatmeal packets. Pour it into a bowl, add a little water, and put it in the microwave for about a minute and thirty seconds. I like to toss in some frozen blueberries and then put it in the microwave to add a little something extra.
Yogurt parfait
Probably my favorite breakfast option. All you're going to need is yogurt of your choosing, some fruit, granola and honey (if you want a little extra sweetness). Toss it all into a bowl or layer it in a glass if you're feeling fancy. If you're in a rush, put it in a Tupperware container and enjoy it on the go!
Fruit smoothie
If you have access to a blender, fruit smoothies are a great breakfast option. The possibilities are endless. I put plain Greek yogurt, some frozen fruit, honey and milk into my smoothie, but you can add anything you want. I recommend frozen fruit because it keeps longer and also gives you a nice, cold smoothie. This is another breakfast you can enjoy on the go.
Breakfast wrap
If you have a little more time in the morning or are feeling extra hungry, you can throw together a breakfast wrap. Toss some frozen spinach or any vegetable you prefer into a pan and warm it up, scramble an egg, sprinkle in some cheese, and wrap it in a tortilla. You can even add some hot sauce, too. This is another breakfast you can bring with you on your way to class.
Lunch
Salad with choice of protein
If you're looking for a lighter lunch, a salad is a great option. You can buy already prepared salad mix and add a scoop of tuna or pre-prepared chicken salad and top it off with your favorite dressing.
Bean burrito
If you're looking for a hardy lunch, a bean burrito is a good choice. You can put any choice of beans you prefer. I add re-fried beans and regular black beans just for some texture. Add them into a pan or microwave them to warm them up. Then add some cheese and wrap that baby up!
French toast
I don't know about you, but I could eat breakfast foods all day, every day. French toast is no exception. Use your favorite type of bread, crack a couple eggs into a bowl with some cinnamon and stir it up. Soak both sides of your break in the egg mixture and put into a buttered pan. Cook until brown on both sides. Sprinkle with some powdered sugar and voila!
Any sandwich that exists
Turkey, ham and cheese or peanut butter and jelly. This lunch option is a classic and a super easy one at that.
Dinner
Pizza
Buy an already-made pizza crust and add your favorite toppings! Put into the oven at 400 degrees until golden brown or the cheese is fully melted. This is also a fun dinner idea to do with friends! You can purchase a large pizza crust for everyone, or individual sizes to make your own personal pizza. You can even make extras to put into the freezer to save for later in the week.
Pasta
It's hard to mess up pasta. Just put some salt into a pot of water and wait for it to boil. Toss in your favorite pasta and let it cook until your preferred tenderness. Add your favorite sauce -- tomato, pesto, alfredo etc., and you're good to go!
Grilled cheese
You can't go wrong with a grilled cheese sandwich. Add your favorite cheese and even some added toppings if you like. I enjoy tomatoes and pickles on mine. Put into a buttered pan and cook until brown on each side. Slice that bad boy and bask in the glory of the gooey cheesiness.
Tacos
Tacos involve a little bit of cooking time, but it isn't too strenuous. Buy ground beef or chicken and toss into a pan. Let it cook until there is no longer any pink visible. Put in a packet of taco seasoning and you're ready to assemble your tacos! Keep your extra meat for later in the week for some more tacos or even add it to your bean burritos for lunch.
