Easy College Dinner Ideas For When You Don't Feel Like Cooking But Also Can't Afford Seamless

Making the transition from a dorm to an apartment has definitely made my life 10 times easier. I have my own room, my own bathroom (shared with one person, but better than sharing with 20), and, best of all, I have my own food.

Having a kitchen comes with a lot of responsibility, especially when there is no dishwasher! Budgeting for grocery trips, deciding who does the dishes when, and who cooks is definitely something that needs to be decided early on. Trust me.

While all of those things can be difficult and take time, I have found that finding things to cook while being on a tight budget has been one of the biggest struggles my roommates and I have faced.

I am here to help you if you feel the same way I do.

I have compiled three different go-to dinner ideas that are foolproof and college-broke-proof. Only costing a few dollars, these meals are me and my roommates' go-to meals this year!

1. Taco Night

This might be our favorite of all the ideas. This cheap take on taco night is super filling and delicious!

Ingredients:

-Taco Kit

-Choice of ground meat (we go with ground turkey)

-Shredded cheese

-Lettuce head

-Sour cream


Cook Time: 20 minutes


Steps:

1. Start cooking the meat in a large saucepan and season with salt and pepper.

2. Wash the lettuce head and pull apart however much you will use for dinner. Bag the rest and save for other dinners.

3. Put your shredded cheese, lettuce, and sour cream in bowls out on the table.

4. Continue cooking the meat until done. When done, drain oil.

5. Mix meat with the taco meat seasoning and then serve with the taco kit.

6. Enjoy!

2. Potato Lasagna

A weird twist of lasagna; my roommates and I melted for this meal!

Ingredients:

-Five (5) small russet potatoes

-Ground meat of your choice (again, we used turkey)

-Shredded cheese

-Tomato sauce of your choice

-Seasoning (salt, pepper, onion powder, garlic powder)


Cook Time: 50 minutes


Steps:

1. While one person starts cooking the ground meat in a saucepan with salt and pepper, have another wash and thinly slice the potatoes. Preheat the oven to 375 degrees Fahrenheit.

2. In a glass pan, spread the potato slices to completely cover the pan.

3. Season with salt, pepper, onion powder, and garlic powder.

4. Once the meat is cooked, drain it and make a layer over the potatoes.

5. Add tomato sauce on top of the meat.

6. Add a heavy amount of cheese on top of the tomato sauce.

7. Repeat layering potatoes, meat, sauce, and cheese until the pan is filled.

8. Bake for 30-35 minutes.

9. Enjoy!

3. Penne Vodka

A classic that everyone is bound to love.

Ingredients:

-Penne pasta

-Vodka sauce

-Frozen veggies of your choice (we went with a pea, corn, and carrot medley)


Cook Time: 15 Minutes


Steps:

1. Bring a pot of water to a boil and add your penne pasta.

2. Cook penne until fully cooked (around 8-10 minutes).

3. In a microwavable bowl, add around 3 cups (this was for four girls, so do this step accordingly to your serving size) of the veggies and a couple of tablespoons of water.

4. Microwave for 1 minute. Stir. Microwave again for 2 more minutes. Let it sit for 2 minutes before taking out.

5. Once the pasta is fully cooked, drain it in a strainer and then add it back to the pot.

6. Pour in the desired amount of vodka sauce and stir over low heat until fully incorporated and warm.

7. Enjoy!

A couple of other meal ideas that we haven't tried yet but are dying to are pizza night, chicken and broccoli, chili night, and Shepard's pie. I hope you try some of these meals out and love them as much as we did!

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.
