I miss you everyday mom. I hope the house isn't so lonely without me. Guess what? The dining hall made chicken parm tonight, but it was nowhere near as good as yours. I'm sorry I don't call as often I should, school is getting the best of me at the moment.

I know as soon as I come home everything will be better. I know my bed will be made, the sheets fresh, floor vacuumed. I know all my favorite snacks will be in the drawer. I know you won't judge me for sleeping until noon, and for eating pizza for breakfast. I know you will stay up until I get home from my friends house no matter how late I stay out. I know you'll greet me with a good morning hug and ask how I slept. I know you'll do your best to not make too much noise in the morning while you put dishes away or when you clean the house. I know you'll listen to my problems, and lead me in the right direction.

I'm sorry. I'm sorry I don't ask you how your day is everyday. I'm sorry I don't tell you what I learned in school today. I'm sorry I argued with you when I was little. I'm sorry I didn't believe you when you said my coat was in the closet right in front of my face (that happens too often). I'm sorry I don't do all my chores. I'm sorry I stay out late. I'm sorry I don't make dinner every once in a while. I'm sorry I eat in my room even when you tell me not to. I'm sorry I lose lots of clothes (P.S. Could you send socks? The laundry machine is always swallowing them). I'm sorry I cost you a lot of money.

Thank you. Thank you for coming to all my sporting events, concerts, plays, and performances. Thank you for listening to me vent for an hour about how my professors are heartless. Thank you for sending me food and money. Thank you for driving me up to school just to take me to lunch. Thank you for always taking my side in arguments. Thank you for always making my favorite food when I come home (Buffalo Chicken Dip is my personal favorite). Thank you for your love and support. Thank you for reading me stories and singing lullabies when I was little. Thank you for cleaning out my cuts when I fell in the street. Thank you for raising me to be the person I am today.

I love you, Mom. I love your cooking, and your personality. I love your kindness and your humor. I love your patience and your advice. I love your smile and your warmth. I love your wisdom and compassion. I love your company and your guidance.

I'm counting the days until the next break because I miss you everyday. Talk to you soon Mom, I love you.

Happy Birthday Mom; I love you.

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

I can't say "thank you" enough to express how grateful I am for you coming into my life. You have made such a huge impact on my life. I would not be the person I am today without you and I know that you will keep inspiring me to become an even better version of myself.

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register. You might change your mind about a class you want to take and must struggle to find another class to fit in the same time period. You also have to make sure no classes clash by time. Like I said, it's a big hassle.

This semester, I was waitlisted for two classes. Most people in this situation, especially first years, freak out because they don't know what to do. Here is what you should do when this happens.

Challah vs. Easter Bread: A Delicious Dilemma

Is there really such a difference in Challah bread or Easter Bread?

Ever since I could remember, it was a treat to receive Easter Bread made by my grandmother. We would only have it once a year and the wait was excruciating. Now that my grandmother has gotten older, she has stopped baking a lot of her recipes that require a lot of hand usage--her traditional Italian baking means no machines. So for the past few years, I have missed enjoying my Easter Bread.
