Don't knock it 'til you try it!
1. Pizza
Even vegans couldn't live without pizza! All you need is a pizza crust, sauce, some Daiya "cheese" and some chik'n strips. Bake it at 350 to the cripsness of your choosing!
2. Garlic Fettucini Alfredo
Alfredo sauce can be made by blending
- ½ cup hemp seeds
- 2 heads roasted garlic
- ½ cup extra virgin olive oil
- 1 tsp sea salt
- ½ tsp cracked black pepper
- 1 large ripe avocado
- juice from 1 large lemon, plus slices for garnish
- 2 scant tbs nutritional yeast
- ¾ cup filtered water
- 10 large basil leaves
Pour that over fettucini, add some broccoli, mushrooms, chickpeas, or whatever veggies you want and you have a great meal!
3. Avocado Sandwich and Quinoa Chips
This sandwich is super easy to make! Toast some bread, add sliced avocado, spinach, tomatoe, and some vegan mayonaise. Don't forget quinoa chips on the side!
4. Lasagna
Without riccotta cheese?? No way! Vegan riccotta cheese can be made by mashing together
- 2-14oz pkg extra firm tofu, drained and pressed
- 10oz tub roasted garlic hummus (1 heaping cup)
- ½ cup nutritional yeast
- ¼ cup fresh basil, finely chopped (optional)
- 1 tsp salt
- 1 tsp garlic powder
After you make the tofu riccotta layer that, lasagna noodles, sauce, and veggies of your choosing in a pan and bake it in the oven for 30 minutes.
5. Tofu Scrambles And A Bagel
Crumble up some tofu in a pan with olive oil, tomatoes, muchrooms, spinach, and some seasoning. Put a bagel on the side with jelly and vegan cream cheese and you have one healthy, energizing breakfast.
6. Stir Fry
Fry some broccoli, snowpeas, peppers, mushrooms and chik'n strips in a pan with some terriaki sauce and serve over brown rice!
7. Tofu Scrambles, "Bacon", And A Banana
There are so many ways to make tofu scrambles, just like eggs, so make them any way you like! You can get packaged vegan "bacon" at any supermarket in the natural foods section. Feel free to add any fruit you'd like too, I like bananas with peanut butter.
9. Cookies!
So cookies aren't a meal, but who does't love dessert? And no, you don't have to make them from scratch! Most stores have actually begun to sell vegan cookie dough and you can find it in the same section as all the other cookie dough.
