I know what you're thinking: Healthy breakfast? No thank you. I will stick to my normal pancakes and syrup. But these breakfast recipes are just savory enough to deceive your tastebuds, and simple enough to make before that 8:15 AM class.
1. PBJ French Toast
Transform your favorite childhood sandwich into a tasty plateful of french toast. First choose your bread of choice (whole wheat, multigrain, etc); I found multigrain to work best. Then, build your sandwich as you normally would, with homemade peanut butter and your choice of jelly or jam. Try adding some roasted peanuts or mixed nuts for some extra crunch, and then close your sandwich. Now that your PBJ is ready, mix together one egg, 1 tablespoon of almond milk, and a sprinkle of cinnamon. Once the mixture is done, your PBJ french toast is almost done! Dip your sandwich in your egg mixture and place on a griddle or frying pan. Make sure to flip your PBJ over so that both sides are equally golden, and then your french toast is ready to be eaten! If you top the french toast with a spoonful of jelly and a handful of mixed nuts, I promise you will not regret it. Finally, don't be afraid to cover it all with some fresh maple syrup or agave.
2. Smashed Avocado, Egg, and Tomato on Rye
If you like avocado as much as I do, you are going fall in love with this recipe. Skip the egg sandwich and lighten your breakfast by whipping up a poached egg and some rye toast. Simply mash an avocado with a fork, and season it with a sprinkle of salt and crushed red peeper. Spread your avocado mash onto the toast, add some thinly slice tomato, and finally place your perfectly poached egg right on top! Feeling bold? Top the egg with hollandaise sauce to make an amped-up Eggs Benedict.
3.Chocolate Protein Crepes
These crepes are nothing short of chocolatey and delicious. In fact, they remind me of a favorite french toast dish stuffed with Nutella and strawberries. These crepes are so simple to make, you are going to wonder why you haven't discovered them sooner! Start by mixing two egg whites in a bowl and adding one scoop of chocolate protein powder. Stir in one teaspoon of organic agave syrup and 1/4 teaspoon of vanilla extract. Finally, add one tablespoon of skim milk and mix it all together. Boom! You have you're batter. Spray and heat up a skillet, pour the batter, spread with a ladle and watch these treats unfold before your eyes. Once the crepes are cooked, stuff them with strawberry greek yogurt and berries. For some extra flavor, don't be afraid to top with granola, more berries, and a drizzle of honey.
4. Whole Wheat Apple Cinnamon Waffles
"And in the morning, I'm making waffles!" Donkey said it best--who doesn't enjoy a good waffle here and there? These waffles are guilt free and packed with sweet apples, and cinnamon goodness. If you have a waffle iron, don't hesitate to try these. Start your batter by mixing together 1 and 1/2 cups of whole wheat flour, and two teaspoons of baking powder. Then, add one tablespoon of agave syrup (or two tablespoons of sugar), 1/2 teaspoon of salt, and one egg. Finish the batter up with 1 and 1/2 cups of skim milk and 1/3 cup of vegetable oil. Sprinkle some cinnamon or apple pie spice into the batter and mix well. Now slice up your favorite apples and gently fold them into the batter and cook the waffles. Finish up your waffles by topping them with some baked apples, almonds, and maple syrup. Finally, sit and enjoy the aroma of fall in your kitchen and enjoy!
5. Skinny Iced Coffee
One breakfast essential that I absolutely cannot function without is my morning coffee. I traded in my usual Dunkin' Donut's iced coffee light and sweet for a homemade iced coffee with almond milk. By brewing my own coffee, and letting it cool overnight I saved roughly $3.25 each day, totaling up to about $22.75 a week. Use sugar or agave as a sweetener, and almond milk or skim milk instead of cream. Craving vanilla? Add a 1/4 teaspoon of vanilla extract, or use vanilla flavored almond milk for some extra flavor!
6. Simple Very Berry Toast
This is one of the simplest and quickest breakfast ideas, but it certainly is not your average slice of toast. Spruce up your boring toast with butter by choosing a multi-grain or rye bread and throwing that in the toaster! Then top the toast with any nut-butter of your choice (peanut butter, almond butter, etc.). My favorite is homemade peanut butter! Cut up a small handful of strawberries, and add just enough blueberries and raspberries to cover your toast. Try sprinkling some granola or nuts for added crunch and top with a drizzle of honey for some added sweetness. Don't like honey? Substitute with agave syrup. The result? A beautiful and tasty breakfast that you can put together in minutes!
7. Apple Berry Smoothie
Smoothies are one of my favorite breakfast treats because of the unlimited possibilities of flavors and combinations. Let your creative abilities run wild by choosing your favorite fruits and juices. My go-to smoothie is a small handful of ice, 1/4 cup of organic apple juice, one cup of frozen mixed berries and 1/2 granny-smith apple. Blend these three ingredients for the perfect consistency and sip on your refreshing breakfast!
