Kitchen Concoctions

Now that fall is here, a warm homemade meal is so much more satisfying. The best of those meals are made in the crockpot. Meals are so much tastier when they've been cooking all day. Cooking with a crockpot is also very college-friendly. It's so hard to make wholesome and delicious meals when you don't have access to a kitchen. Here are three pinterest-inspired and tasty meals you can make within the comfort of your dorm:

1) ClassicChicken Noodle Soup

You will need:

3 cooked and cubed chicken breasts (you can find them already cooked at almost any grocery store)

4 cups chicken broth

2 Tbsp. butter

1 cup chopped carrot

1 cup chopped celery

2 cans of Cream of Chicken soup

1/4 cup milk (to make it creamy)

your choice of noodles

In your crockpot, combine the butter, broth, soup, and milk, and whisk it all together. Then add veggies and chicken and cook on low for four hours. Then add your noodles, cover, and cook for one more hour on high.Serve with crackers and enjoy!

2) Buffalo Chicken

You will need:

3-4 boneless skinless thawed chicken breasts

buffalo sauce

ranch dressing mix

Cook the chicken on high for three hours, after that, drain the juices. Mix together sauce and ranch mix and pour over the chicken. Then cook for 30 more minutes on high and serve shredded or whole!

3) Mac & Cheese

...because who doesn't love Mac and Cheese?

You will need:

Elbow macaroni

Three cheeses (any kind you want, about a cup of each)

1 can of evaporated milk

1 1/2 cups whole milk

salt and pepper to taste

Spray your crockpot with cooking spray...cheese is sticky! Cook on low for 1 and 1/2 hours, periodically checking in. After that, just fold over the noodles to make sure there are no pockets and all the cheese is melted. Grab a fork and enjoy!

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.
