We are right in the middle of the summer and I am not sure about you, but I am always looking for delicious ways to beat the heat. Not to mention with all the negativity going on right now, it is nice to focus on something a lot more fun! So here are my favorite snacks and refreshments for you to enjoy wherever you are this summer; whether it be poolside, sunbathing at the beach or even enjoying the beautiful weather from the window with glorious air conditioning!

Peach Tea

This is my all-time favorite after a day in the sun, and after drinking plenty of water of course.

Mini Key Lime Cheesecakes

Key lime is so light and tangy, and much better when you can pop the whole miniature bite into your mouth.

Piña Colada

"If you like pina coladas, and getting caught in the rain..." Both would be a blessing this time of year.

Smoothies

You can never go wrong with a smoothie! Combine you favorite fruits and enjoy.

Rice Krispie Treats

Making Rice Krispie treats is half the fun, in the air conditioning I may add. Use food coloring, decorations and your creativity to make a whole indoor picnic out of the sun!

Chicken Caesar Wraps

Salad is always a go to light and fresh meal but when you add chicken and wrap it up, it is much more satisfying.

Pasta Salad

The combination possibilities are endless when creating this lunchtime favorite.

Frozen Yogurt Berry Bites

It does not get much better than eating bite sized frozen yogurt while basking in the sun.

Watermelon Lemonade

Watermelon and lemonade together? How could one drink be any more perfect for summer?

Summer Rolls

This snack has summer right in its name! These are a cool twist on the basic spring roll.

If all else fails, you can never go wrong with sliced fruit. Try making this dipping sauce to dip any kind of fruit (or fingers) in.

Serving these delicious, picture perfect treats at any gathering will guarantee that you are the life of the party! (Especially, if you did not serve them, then your guests would be nothing but a puddle in this mid summer heat!) What are you waiting for? For as long as I can remember, I have been listening to The Beatles. Every year, my mom would appropriately blast “Birthday” on anyone’s birthday. I knew all of the words to “Back In The U.S.S.R” by the time I was 5 (Even though I had no idea what or where the U.S.S.R was). Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register.
