Everybody knows that pinterest can either be a goldmine or a recipe for disaster (no pun intended). I've put together a short list of tried-and-true recipes so you don't have to present your family with a brownish lump that's supposed be "Chocolate lava cake" or what have you. Besides being tasty, these recipes are also relatively healthy. I realized after I made this that seven out of the ten recipes are sweet, not savory, but oh well I guess you can tell I have a sweet tooth!

1. Sweet Potato and Quinoa Salad

This is really yummy for lunch or dinner and easy to make. My only suggestions: it says it serves four but if this is all you are eating, I say it serves three. Also, add more cilantro and lime to the dressing than you think.

2. Banana Zucchini Baked Oatmeal

Sounds disgusting right? It's actually really good and pretty simple to make, especially if you use a food processor to grate the zucchinis. It tastes somewhat like zucchini bread but in oatmeal form. Be sure to use ripe bananas if you want them to be sweet. One batch makes just over a dozen muffins, so use a large bowl.

3. Vegan Fried Rice

I'm allergic to eggs so I tried this recipe and it actually turned out really well! I did change a few things though: I used sesame oil instead of olive oil (gives it more flavor), I added broccoli, and I didn't really follow the ingredient quantities since I made a much bigger batch. I served this with some homeade ramen soup for dinner!

4. Lemon Butter Baked Cod

This recipe is SUPER easy to make and tastes really good. You could add capers for some extra flavor as well. I served it with rice and veggies.

5. Vegan Banana Pancakes

Again, since I'm allergic to eggs, I'm always on the hunt for good egg free recipes. These taste really good and they are a lot healthier than normal pancakes. If you don't want them to be vegan, you could always add in an egg and use regular milk instead of dairy free milk.

6. Coconut Almond Granola

This is a very simple recipe. It turns out nice and crunchy but not too sweet. I used agave nectar instead of honey because I've heard that it's bad to cook honey...

7. Healthy Twix/Almond Joy Bars

These taste delicious and the texture is perfect. They are supposed to be a a kind of healthy Twix bar but in my opinion they taste almost exactly like Almond Joys. My only complaint is that they have a lot of coconut oil. Next time a make them I might try substituting date paste for coconut oil in the middle layer and I would definitely suggest using less oil in the bottom layer because I ended up having to add extra coconut and I had to bake it longer than the recipe said. The recipe requires few ingredients but it takes a while for each layer to set in the fridge.

8. Chocolate Nut Butter Smoothie

Who doesn't want to drink a milkshake for breakfast? Cause that's what this tastes like, except its way healthier. This recipe uses peanut butter but I usually use almond butter instead. I also usually put less milk (like 1/4-1/2 cup) because I like to use frozen bananas instead of ice and I like my smoothies thick.

9. Pumpkin Pie Oatmeal

If you can't tell, I'm a fan of breakfasts that taste like desserts. To be completely honest, I haven't actually made this exact recipe for pumkin pie oatmeal but I have put all of these ingredients in my oatmeal before, and I can tell you, it's delicious. The quantities of different ingredients are really up to you. Plus, I got the idea from pinterest, so technically I'm not cheating.

10. Nut Butter, Banana, Chocolate Quesadilla

https://www.pinterest.com/pin/523684262900508862/

Again, I used almond butter instead of peanut butter, but it's really up to you. This is great for dessert or a snack. Make sure to heat it all the way through so the chocolate melts and the bananas get all gooey and sweet.

For as long as I can remember, I have been listening to The Beatles. Every year, my mom would appropriately blast “Birthday” on anyone’s birthday. I knew all of the words to “Back In The U.S.S.R” by the time I was 5 (Even though I had no idea what or where the U.S.S.R was). I grew up with John, Paul, George, and Ringo instead Justin, JC, Joey, Chris and Lance (I had to google N*SYNC to remember their names). The highlight of my short life was Paul McCartney in concert twice. I’m not someone to “fangirl” but those days I fangirled hard. The music of The Beatles has gotten me through everything. Their songs have brought me more joy, peace, and comfort. I can listen to them in any situation and find what I need. Here are the best lyrics from The Beatles for every and any occasion.

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register. You might change your mind about a class you want to take and must struggle to find another class to fit in the same time period. You also have to make sure no classes clash by time. Like I said, it's a big hassle.

This semester, I was waitlisted for two classes. Most people in this situation, especially first years, freak out because they don't know what to do. Here is what you should do when this happens.
