Thanksgiving isn't usually a vegetarian or vegan's favorite holiday, especially if you spend it with people who like the classic dishes. Don't get me wrong–Thanksgiving is a great time to spend with family and to be thankful, but I'm just not that into the classic turkey dinner. So on that note, here are some recipes to make any herbivore (or meat-eater) happy this holiday!

1. Vegan Biscuits

Biscuits may be a Southern favorite, but they are sure to please any crowd! Top with veggie gravy, cranberries, vegan butter – you can't go wrong!

2. Sun-Dried Tomato and Butternut Squash Bisque

Soup is a fall essential, and tomato and butternut squash are my favorites. Throw them together for pure magic.

3. Butternut Squash, Brussels Sprout and Bread Stuffing with Apples

Stuffing is key for any Thanksgiving meal, so why not use hearty fall veggies to create this perfect vegan stuffing instead of the traditional?


4. Mashed Sweet Potatoes

Who doesn't love sweet potatoes? Plus, this recipe is totally dairy-free!

5. Super Easy Cranberry Sauce

What's a Thanksgiving meal without the cranberries? Check out this super sweet, super easy recipe for some classic cranberry sauce.

6. Pecan and Mushroom Wellington

For as long as I can remember, I have been listening to The Beatles. Every year, my mom would appropriately blast “Birthday” on anyone’s birthday. I knew all of the words to “Back In The U.S.S.R” by the time I was 5 (Even though I had no idea what or where the U.S.S.R was). Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register.
