In my humble opinion, Pinterest is just about the best website in existence. I get to avoid responsibilities while pretending to gather information that I'll use some day. The likelihood of that actually happening? Slim to none. However, one board is beneficial enough that I try out the pins on it. This board is creatively titled "Food." Here's a few of my favorite finds (the recipes can be found by clicking on the pictures):

1. Zucchini Lasagna

Since I have a rebellious streak and don't usually follow recipes completely, I made mine the classic lasagna way, instead of making roll-ups and swapped the ricotta cheese for cottage cheese. Overall, delicious, and definitely worth the hand cramps I got from grating all that zucchini.

2. Peaches and Cream Crepes

I may or may not have totally failed at flipping said crepes and ended up with several chunks of skinny-looking pancakes, but I have a sister who saved my cooking endeavor and we ended up with several beautiful crepes. My changes: I don't even know what mascarpone cheese is, so I used cream cheese for the filling.

3. Broccoli Tots

About 50 percent of these actually stuck together, but they tasted A-maz-ing.

4. Cauliflower Quinoa Meatballs

Disclaimer: I'm a complete wimp when it comes to spicy things, so "buffalo" isn't even a word in my culinary vocabulary. Dairy free butter also did not happen. As a result, my meatballs, were more of a patty. Still good!

5. Deep Dish Fudgy Oatmeal Bars

They're as good as they look!

6. Sausage Pepper Fettuccini Skillet

I've made this one a few times now and drool a little when I think about it. It's an easy recipe to play around a bit with the ingredients, and I encourage you to do so!

7. Tomato Avocado Melt

I like to make this in more of a grilled cheese style. Then I mix some of Emril Lagasse's Baby Bam with a little may and spread it on. It has become one of my favorite college meals.

8. Lasagna Soup

Lasagna is beautiful in all forms, but you might want to make sure you rip up the noodles into the size shown in the recipe. I started out strong, but by the end I was throwing the whole noodles in. That makes it quite difficult to consume, in case you were wondering.

9. Funfetti Pancakes

These pancakes are a wise choice if you're a fan of birthday cake variations.

10. Lunch Lady Brownies

For years I have been on a hunt to find a recipe that tastes like the brownies I had in elementary school, and this is the closest I've found so far.

11. Cheeseburger Casserole

This recipe combines several of my favorite foods, so there was really no way it could be bad.

I had to exit out of Pinterest because I was becoming ravenous from looking at all the food, but I highly encourage you to try these recipes.

As college students, we are all familiar with the horror show that is course registration week. Whether you are an incoming freshman or selecting classes for your last semester, I am certain that you can relate to how traumatic this can be.

1. When course schedules are released and you have a conflict between two required classes.

Bonus points if it is more than two.

Raising the minimum wage to a livable wage would not only benefit workers and their families, it would also have positive impacts on the economy and society. Studies have shown that by increasing the minimum wage, poverty and inequality can be reduced by enabling workers to meet their basic needs and reducing income disparities.

I come from a low-income family. A family, like many others in the United States, which has lived paycheck to paycheck. My family and other families in my community have been trying to make ends meet by living on the minimum wage. We are proof that it doesn't work.

As an English Major in college, I have a lot of writing and especially creative writing pieces that I work on throughout the semester and sometimes, I'll find it hard to get the motivation to type a few pages and the thought process that goes behind it. These are eleven thoughts that I have as a writer while writing my stories.

April Ludgate

Every college student knows and understands the struggle of forcing themselves to continue to care about school. Between the piles of homework, the hours of studying and the painfully long lectures, the desire to dropout is something that is constantly weighing on each and every one of us, but the glimmer of hope at the end of the tunnel helps to keep us motivated. While we are somehow managing to stay enrolled and (semi) alert, that does not mean that our inner-demons aren't telling us otherwise, and who is better to explain inner-demons than the beloved April Ludgate herself? Because of her dark-spirit and lack of filter, April has successfully been able to describe the emotional roller-coaster that is college on at least 13 different occasions and here they are.
