3 Healthy Finals Week Snacks

For those students struggling to get through finals week while staying sane.

If you're a student then you know the struggle of getting through finals week. Your workout routine is gone. You don't see your friends or family for an entire week because you've been a hermit in the library, and worst of all, any hope of a healthy diet flies right out the window.

All hope is not lost though! Here are some delicious, semi-healthy, cheap snacks that you can whip up in just a few minutes and get right back to studying (Or procrastinating by looking at Odyssey articles)!

1. Cheese-less Cheesy Popcorn

This is my personal favorite and probably the easiest to make. You'll need:

1/4 cup popcorn kernels

1/8 cup melted coconut oil (or really any other kind of oil you have)

4 - 5 Tablespoons of Nutritional Yeast

Salt to taste

All you need to do is throw your kernels into a paper bag and pop them in the microwave until the pops are five seconds apart, toss them in your oil and salt, and then sprinkle on your delicious nutritional yeast! Nutritional yeast is an ingredient commonly used in vegan dishes, but anyone can eat it! It contains a surplus of good vitamins, including B12, and has a light cheesy taste that's perfect for making a healthy, cheesy, popcorn!

2. Avocado Hummus

I make this for every summer party, BBQ, and family get together and it's always a hit! You'll need:

1 can chickpeas (garbanzo beans)

1 small avocado

1 lemon

2 cloves garlic

1 tbsp. paprika

1 tbsp. cumin

Here's another easy one. Just drain the chickpeas, save the water, and dump those, along with the rest of the ingredients into a food processor or blender, and you're good to go! If the hummus isn't blending well, use the reserved chickpea liquid to smooth it out! You can eat this with chips, crackers, or sliced veggies.

3. Healthy Birthday Mug Cake

If you have a sweet tooth, this recipe is for you. This is the perfect dessert for those struggling students. It has minimal ingredients and doesn't use a lot of dishes. You'll need:

4 tbsp. flour

2 tbsp. sugar

1/4 tsp. baking powder

2 tsp. apple sauce

1 tsp. olive oil

4 tbsp. almond milk

1 tbsp. rainbow sprinkles

2 tbsp. powdered sugar

2 tbsp. almond milk

First, add the flour, sugar, baking powder, and sprinkles to a mug. Stir this until it is thoroughly mixed, and add apple sauce, oil, and 4 tbsp. almond milk and mix. Toss it in the microwave for 45 seconds to 1.5 minutes, depending on how done you like it. While your waiting, mix the powdered sugar and 2 tbsp. almond milk together to create an icing. When the cake is done, drizzle your icing on top, and you have your personal-sized mug cake!

I was asked so many times why I wanted to go to a small school when a big university is so much better. Don't get me wrong, I'm sure a big university is great but I absolutely love going to a small school. I know that I miss out on big sporting events and having people actually know where it is. I can't even count how many times I've been asked where it is and I know they won't know so I just say "somewhere in the middle of Wisconsin." But, I get to know most people at my school and I know my professors very well. Not to mention, being able to walk to the other side of campus in 5 minutes at a casual walking pace. I am so happy I made the decision to go to school where I did. I love my school and these are just a few reasons why.
