Even though our time together has been brief you left me with a full heart....and a full stomach. My dearest Chicago deep dish pizza, you are a game changer. Those other slices don't stand a chance.
For years I'd heard my friends sing your praises, going on about your delicious form. I couldn't believe you were truly that much better.
Then eight months ago we met for the first time. Everything I thought I knew about you was wrong. You weren't like any slice I'd had before. How could an experience like this even fall under the general category of pizza? With that thick, flakey crust filled with layer upon layer of hot and gooey mozzarella cheese, and smothered with red sauce. I didn't think it could get any better.
Last week we met again and I saw a different side of you, same flakey crust and decadent cheese, but this time there was no red sauce and, instead, peppers and mushrooms and fresh roma tomatoes layered in and on top of the mozzarella. I was in heaven. How can flavors this delicious be conjured? How can a dining experience this fulfilling be conceived? It may remain a mystery, but my great love for your unique (and cheesy) goodness will stand as a testament to what we have.
