As a vegetarian and a Mexican, it’s often hard to find foods that are accommodated to you, considering a lot of dishes are made with meat. At least my family does, but my family also accommodates to me, too. And I’m very thankful for that. However, if you’re ever looking for some traditional Mexican food and ways to make them, you have come to the right place.

Remember that you can sub-in and sub-out anything you’d like on them, so that you can make them your own way! These are just how I like to eat them, but feel free to change them.

1. Enchiladas

These are my ultimate favorite food. I like to personally eat them with cheese on the inside and mole.

2. Chile Rellenos

This is something my dad often gets me or makes for me. When he gets them from the Mexican store, they’re just the typical chile rellenos with the cheese, chile and egg. I like to sometimes put cheese on top of it too. Sometimes my dad makes it in a sort of soup, and we eat it like that.

3.Tacos

Normally, for some reason, people think that you can’t eat tacos as a vegetarian, but you definitely can. If I want something cheap, I can just go to Taco Bell and get a 99 cent soft spicy potato taco. I can also go to authentic Mexican restaurants in Chicago, which a lot of them do offer vegetarian tacos. The ones that I have usually come with beans, rice, avocado and sour cream.

4. Quesadillas

This is probably the easiest food you can make since it literally does not take long. My boyfriend likes to put salt on them, which gives them a little extra taste. I also like to eat them with sour cream or some salsa. Another idea is putting mushrooms, beans, or anything else you’d like.

5. Chilaquiles

I love these so much, especially when my grandmother makes them. I wish I had the recipe for how she makes them, but sadly, I don’t. These are my second favorite dish, and I love eating them with sour cream and cheese, too.

6. Rice and Beans

A classic. I don’t have to explain this one.

7. Flautas

There’s a Mexican grocery store where I live that makes the best ones I’ve ever had. They make them with papas, and I absolutely love eating them with sour cream and cheese.

8. Tamales

I also wish I knew how to make these, but don’t. But I swear, I can’t wait until the holidays when there are leftovers for days. I know these are usually made with pork, but I love when my grandma makes them with rajas and cheese.

9. Guacamole

With some chips.

10. Elotes

Another classic. Mayonesa, manteca, queso, chile de polvo, y todo.

Mexican vegetarian status achieved.

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.
