Eating Healthy with Dietary Restrictions

As someone who is recently lactose and gluten intolerant, it is pretty hard to find a flavorful meal. Also, as one of the many students affected by the infamous "Freshman Fifteen", I thought that, since I now can’t eat bread, I might as well as try to cut out as many carbohydrates from my diet as possible. So now, I have an even harder feat of finding good food that is actually healthy for me. By cutting out all the gluten, lactose, and bad carbs from my diet, it is super important to find foods that not only fill me up, but also fulfill my vitamin and dietary needs. After about two weeks of attempting to eat healthy, watching speeches about different diets, and looking at the back of all the labels of food at the store, I have finally found some foods that taste great and are super healthy. Here are just a few.

Salmon

Salmon may be higher in fat then most meats, but there are so many vitamins and minerals in salmon that make it a “super” food. Also, there are so many ways to prepare salmon. I like it raw with soy sauce. Another really yummy way is grilling the salmon in a lemon dill sauce.

Brussel Sprouts

If you steam them and put them in a butter and garlic sauce, brussels sprouts are a great side of any dish. Plus, they are full of so many good nutrients that our bodies need.

Chicken Salad

A salad topped with grilled chicken is always a great go to meal. Not only do you get the healthy vegetables of the salad, but also fulfill you're need for protein. Just remember to top the salad with a low calorie dressing or just a light drizzle of vinegar.

Pulled Pork

Now you many not be able to eat it on a bun, but with a little barbecue sauce, the pork makes an amazing meal. Also, if you like black beans, seasoned pulled pork if great with beans.

Zucchini and Yellow Squash

Steamed or grilled zucchini and yellow squash with a little garlic rub makes another great side.

Peanut Butter and Celery

Dipping celery in peanut butter makes a great snack or even a side for lunch. Just make sure that you buy real peanut butter that is not so high in sugar.

Edamame

Not only does this little vegetable have so many vitamins, but it also has a lot calcium, which is amazing for people that can not drink milk. It is always great to pair with salmon sushimi.

While these are just a few of the super foods, they are extremely healthy and very yummy. Hopefully by eating super healthy, I can not only lose a little weight, but I can also lead a healthier lifestyle for the rest of my life.

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register.
