As odd as it may sound, Easter is my favorite holiday. Thinking back to childhood Easter egg hunts, big bunnies in baskets, and the first signs of spring, always bring back fond memories for me. While I have grown up a bit, the joy that I feel for this holiday has not faded. Due to the fact that Easter did not fall during my semester break, I was forced to celebrate it a bit early with my family while I was home. I tested out a tutorial that I would love to share, since Easter is fast approaching. Here is a festive food option for your Easter Sunday!

Cute Easter Egg Cake Pops Tutorial

You Will Need:

1 Box of a cake mix of your choice (including the required ingredients: eggs, oil, water, etc.)

1 Tub of frosting of your choice

1 Bag of chocolate candy melts of the flavor and color of your choice

Plastic Easter eggs halved vertically

Paraffin Wax (optional, but recommended)

Cake pop sticks (optional)

Decorating supplies of your choice (optional)

Cookie Sheet

Parchment paper/ tinfoil

Double boiler or microwave-safe bowl

Utensils

Process:

Step 1: Bake your cake by following the instructions listed on the box and let cool.

Step 2: Crumble the cake into fine crumbs and combine with roughly ¼-½ a container of frosting, depending on cake consistency and your preference for sweetness, until the mixture has a doughy consistency.

Step 3: Form your Easter egg shape by pressing your “dough” into vertically halved Easter eggs and place on a cookie sheet covered in parchment paper or tinfoil. Add cake pop sticks if desired.

Step 4: Freeze for 30 minutes to 1 hour, depending on the size of your pops. You want them to feel firm, but not frozen.

Step 5: Melt your chocolate candy melts in double boiler or microwave, until the chocolate is thin and smooth. You may want to add a bit of paraffin wax to the chocolate to help thin it.

Step 6: Fresh from the freezer, dip your cake pops in the chocolate, being sure to coat them completely. Decorate as desired.

Step 7: Place your chocolate covered cake pops in the fridge to set/harden for about 30 minutes.

*** For best freshness, keep stored in the fridge at all times***

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register. Like I said, it's a big hassle.

This semester, I was waitlisted for two classes. Most people in this situation, especially first years, freak out because they don't know what to do. Here is what you should do when this happens.

Ever since I could remember, it was a treat to receive Easter Bread made by my grandmother. We would only have it once a year and the wait was excruciating. Now that my grandmother has gotten older, she has stopped baking a lot of her recipes that require a lot of hand usage--her traditional Italian baking means no machines. So for the past few years, I have missed enjoying my Easter Bread.

I was asked so many times why I wanted to go to a small school when a big university is so much better. Don't get me wrong, I'm sure a big university is great but I absolutely love going to a small school. I know that I miss out on big sporting events and having people actually know where it is. I can't even count how many times I've been asked where it is and I know they won't know so I just say "somewhere in the middle of Wisconsin." But, I get to know most people at my school and I know my professors very well. Not to mention, being able to walk to the other side of campus in 5 minutes at a casual walking pace. I am so happy I made the decision to go to school where I did. I love my school and these are just a few reasons why.
