What better way to start off October than with some more yummy fall recipes? 

Pumpkin Pie Muddy Buddies

Ingredients:

8 cup Chex Cereal

12 oz. white chocolate chips

½ pumpkin puree

2 cups powdered sugar

3 tsp. pumpkin pie spice

1 cup fall colored M&Ms

Preparation: Microwave the chocolate chips for 30 seconds, then stir. Repeat until they are completely melted, then stir in the pumpkin puree. In a separate bowl, combine the pumpkin pie spice and powdered sugar. Spread the cereal on a lined tray and pour the melted mixture over the cereal. Sprinkle the sugar/pumpkin spice mixture over the cereal and toss to coat well. When they are completely coated, add the M&Ms and enjoy! 



Super Quick Butterfinger Dip 

Ingredients:

10 fun size Butterfingers 

8 oz. softened cream cheese

10 oz. marshmallow fluff

Preparation. Mix the softened cream cheese and the marshmallow fluff together. Roughly chop the 10 Butterfingers and then stir them into the mixture. You can make it beforehand and refrigerate, or eat it immediately with apples or whatever other fruit you like. 


Simple Apple Smoothie

Ingredients:

2 tart apples

2 tbsp. walnuts

1 tsp. cinnamon

1 pinch nutmeg

½ cup almond milk

6 ice cubes

Preparation: All you have to do remove the apple cores and then blend all the ingredients together. The recipe makes enough for two servings. 



Candy Caramel Corn Snack Mix

Ingredients:

2 cups caramel corn

½ cup candy corn

½ cup peanut butter M&Ms

2 oz. pretzels

2 oz. cashews

Preparation. Combine all of the ingredients into a bowl and it is ready to eat.



Applesauce Parfait With Cinnamon Breadcrumbs

Ingredients:

1 ½ cups breadcrumbs

3 tbsp. sugar

2 tsp. ground cinnamon

2 tbsp. butter

Applesauce

3 cups plain, vanilla, or honey-sweetened yogurt

½ chopped, toasted hazelnuts

Preparation. On medium heat, stir together the breadcrumbs, sugar, cinnamon, and butter for about five minutes and let cool. Then, in four large bowls or glasses, alternate layers of applesauce, breadcrumbs, and yogurt. Top with toasted hazelnuts and they are ready to serve.



Churro Pretzels

Ingredients:

9 cups pretzels

1 ½ cups cinnamon chips (you can find these near the regular chocolate chips)

6 tbsp. unsalted butter

1 cup, plus 1 tbsp., powdered sugar

½ cup plus 1 tsp. sugar

8 tsp. cinnamon

Wax paper

Preparation: Pour the pretzels into a large bowl. Then in a small bowl, stir together powdered sugar, cinnamon, and sugar until evenly mixed. Melt the cinnamon chips and butter and then pour them over the pretzels and stir until evenly coated. Immediately add the powdered sugar mixture and stir until all the pretzels are covered. Spread them out on the wax paper to cool.

For as long as I can remember, I have been listening to The Beatles. Every year, my mom would appropriately blast “Birthday” on anyone’s birthday. I knew all of the words to “Back In The U.S.S.R” by the time I was 5 (Even though I had no idea what or where the U.S.S.R was). Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register.
