Meatless Monday: Vegan Buffalo Chik'n Pizza

Being a vegan in college can suck sometimes, especially when it comes to the food offered. At times it seems like the only option you have is salad. While salad is delicious, sometimes you want something more. Here's my favorite recipe for vegan buffalo chicken pizza. It's really simple and can be made in the microwave.

Vegan Buffalo Chik'n Pizza

Things You'll Need:

1 wheat pita bread

1 tbsp barbecue sauce

1/4 cup of vegan "cheese" (my favorite is Daiya mozzarella )

1 vegan "chicken" patty (I recommend Boca buffalo chik'n patties)

2 tbsp tomato sauce

1 tbsp hot sauce (I recommend buffalo sauce or siracha)


Prep:

Before you begin you need to make sure that your "chicken" patty is thawed out enough to cut. You can do this by putting it in the microwave for a few seconds. Once it's thawed out cut it up into your choice of cubes or strips and put to the side. Next you need to mix your barbecue sauce and hot sauce together.

Let's begin:

On a microwave safe plate place down your pita bread. Next cover your pita bread with your tomato sauce. After that's done place your "chicken" cubes or slices down onto the bread and sprinkle the "cheese" over top of it. Drizzle your barbecue sauce mixture over top of your pizza. Place your pizza into the microwave and cook it for 2 minutes, in 1 minute intervals checking on the pizza after each time. Lastly enjoy!
