Dear Tacos,

I don't even know where to begin with you, my wonderfully spicy bundle of deliciousness. I guess I should start by explaining just how much you mean to me. You know how some people live for the weekends? Or can't wait until Thirsty Thursday finally rolls around? Well, not me! My favorite day of the week is Taco Tuesday, because I'm guaranteed to enjoy my favorite meal.

I'm sure at times you feel undervalued, with so many people boasting about burgers and parading around pizza. But you should know that you truly are second to none. It takes a special type of food to be able to be able to go with the ultimate snack food- chips and salsa- but you do just that and more! You are even able to rock chips and guac! Pizza and burgers have got NOTHING on you, my beloved tacos. Don't ever let anyone tell you otherwise!

I would like to thank you for being my #1 go-to support system. Somehow you're always able to sense my mood and adjust yourself accordingly. I'm feeling sad and discouraged? There you are with a comforting soft shell filled with perfectly seasoned chicken blanketed by salsa with just enough kick to remind me that life will get better. And those days when I'm bursting with joy and ready to celebrate? You're ready with a crunchy hard shell, spicy ground beef, and a plethora of glorious toppings that form a party in my mouth. And when I convince myself that I need to attempt to eat healthy? (LOL I know what a joke, right?!) There you are again, presenting yourself as a taco salad and making my guilt disappear with each bite of crunchy lettuce. Seriously, I don't know how I would get through life without you!

If you haven't caught on by now, dearest tacos, I really, truly love you. Not a week goes by that I'm not dragging my friends to a Mexican restaurant for dinner, or googling a new place to try you at. And while I do have my favorite restaurants to enjoy you at, I have yet to find a taco I won't eat. That in itself, I believe, is a testament to your greatness.

So to conclude, oh tacos my true love, I would simply like to thank you for spicing up my life when it was feeling a little bland. Loving you has become a big part of who I am, and I wouldn't have it any other way. Keep doing what you're doing, and I'll see ya soon at our next Taco Tuesday date night!

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.
