Living in an apartment this year has taught me many things: one of them being how to cook for myself in new ways, because eggs get boring after a while. I grew up with my mom always making homemade food for dinner, including chicken and dumplings, chicken noodle soup, stew, soup, and much more. Craving dumplings one night, I decided to try them out myself...and it worked! I've made them four times already and every time they were delicious! So here is my homemade dumpling recipe with a college student budget...and you may have all the ingredients if you've made cookies before!

Prep time: 10 minutes

Cook time: 15 minutes

Serving Size: 2

Ingredients:

  • 1 cup of flour
  • 2 teaspoons baking powder
  • 1 teaspoon white sugar
  • 1/2 teaspoon salt
  • 1 tablespoon butter or margarine
  • 1/2 cup of milk
  • Ramen noodles flavor packet
  • Water

Supplies:

  • Medium mixing bowl
  • Deep pot with lid
  • Big spoon or ladle
  • 1/2 cup measuring cup
  • 1/2 teaspoon measuring spoon
  • 1 tablespoon measuring spoon
  • Spoon
  • Bowl

Let's get started!

1. Turn your stove on high and boil about 7 cups of water in a deep pot. Stir up your ingredients while you're waiting.

2. Mix the dry ingredients in the mixing bowl, then cut butter into the mixture. Stir in the milk. It should have a sticky consistency. Add more milk if necessary.

3. When the water is about to come to a boil, take the chicken flavor packet from the Ramen noodles and stir into the water, disintegrating completely. Using a spoon, drop lumps of dough into the seasoned water, letting the previous one float to the top before adding another.

4. Cover the pot and simmer on medium heat for 15 minutes.

5. When they're done, scoop out the dumplings with as much or as little broth as you desire. Enjoy with a spoon or fork!

The cool thing about this recipe is that you can personalize it to your liking! Add parsley flakes to the dry ingredients for a distinct flavor. Try a different flavor packet or vegetable broth. Cut up some onions, potatoes, and carrots to add more variety. Throw in some chicken. The possibilities are endless!

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

I can't say "thank you" enough to express how grateful I am for you coming into my life. You have made such a huge impact on my life. I would not be the person I am today without you and I know that you will keep inspiring me to become an even better version of myself.

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register. You might change your mind about a class you want to take and must struggle to find another class to fit in the same time period. You also have to make sure no classes clash by time. Like I said, it's a big hassle.

This semester, I was waitlisted for two classes. Most people in this situation, especially first years, freak out because they don't know what to do. Here is what you should do when this happens.

Challah vs. Easter Bread: A Delicious Dilemma

Is there really such a difference in Challah bread or Easter Bread?

Ever since I could remember, it was a treat to receive Easter Bread made by my grandmother. We would only have it once a year and the wait was excruciating. Now that my grandmother has gotten older, she has stopped baking a lot of her recipes that require a lot of hand usage--her traditional Italian baking means no machines. So for the past few years, I have missed enjoying my Easter Bread.
