Festive Stuffed Peppers


If you're like me you enjoy a good homemade dinner that you don't have to spend hours in the kitchen preparing for and cooking. Because who has time for that? This recipe is an easy go to meal. AND the best part is it's cute enough to post on social media and share with your friends. So, lets get into the fall spirit with some yummy stuffed peppers!

Ingredients:
1 lb ground beef
1 cup of corn
1/2 white onion
1/2 cup cheese
1/2 cup marinara (more or less is okay)
3/4 cup quinoa (cooked)
1 tsp cilantro (optional)
4 bell peppers

Season to taste:
Onion powder
Garlic Powder
Chili powder
Salt
Pepper

Step One: pre heat the oven to 350, while preheating bring a pot of water to a boil, cut the tops off the peppers and remove the seeds, boil the peppers for 10 minutes to soften then remove and set aside to cool.

Step two: cook the quinoa

Step three: in a sauce pan cook the meat and diced onion.

Step four: in a mixing bowl add the marinara, onion, meat, drained corn, cheese, quinoa, cilantro, and seasoning.

Step five: If you want dinner to be cute and festive you can carve out faces or if not just go ahead and stuff the peppers, top with marinara and cheese (optional), and bake for 20-25 minutes.
