It's getting to be that time again. Farm tours, hayrides, football games and pumpkins everywhere... you know the drill. Living in the midwest, fall is easily the most beautiful time of year. With that being said, it's getting cold out and people are generally less inclined to leave the house to go out to eat. Here are five of my favorite festive healthy recipes to keep up your good eating habits as the temperature goes down!

1. Pumpkin Smoothie

1 cup of ice

8 oz. almond milk

1 banana

1 green apple

1/2 can of pumpkin puree

3 shakes of cinnamon

1 shake nutmeg

1 date

Blend to taste!

2. Baked Spaghetti Squash

1 spaghetti squash, sliced in half

2 tsp. of coconut oil (1 for each half)

1 shake of salt on each half

1 tbsp. brown sugar on each half

5 pecans on each half

Bake for 40 minutes at 375 degrees.

3. Pumpkin Chocolate Chip Muffins

1 cup of canned pumpkin

1 tbsp. honey

1 ripe banana mashed (optional for additional sweetness and texture)

2 tbsp. brown sugar

1 tsp. vanilla extract

1 large egg

1/4 tsp. salt

1/2 tsp. baking soda

1/4 tsp. baking powder

1 tsp. cinnamon

1/4 tsp. nutmeg

1 cup of oats

1/2 cup chocolate chips

Mix together, bake for 20 minutes at 350 degrees!


4. Gameday Ham and Cheese Sliders

1 Package of Hawaiian Rolls

1 lb. of ham, sliced thin

Sliced provolone or swiss

Sauce to top the rolls:

Poppy seeds

Melted Butter

1 tsp. onion powder

2 tsp. brown sugar

1 tsp. Worcestershire sauce

1/2 tsp. dijon mustard

Bake in pan for 15-20 minutes at 350 degrees!

5. Apple Pie Bites

1 can of Crescents, pulled apart

Brown sugar/cinnamon/butter/walnut mixture

3 apples, sliced

Roll up each roll with the mixture and an apple slice, bake for 15 minutes or until golden at 375 degrees!

Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine.
