Easy Healthy Meals: Breaded chicken

Here is a healthy recipe that I've recently came across!

"How can I make a dish with lower carbs and still have it taste like it's full of carbs?" The question we all have when trying to make something new in the kitchen. Here is a recipe I put together one night, when looking around my kitchen for something to eat.

What you will need:

1. One lemon

2. Wheat bread crumbs

3. Olive oil

4. Two eggs

5. Fresh boneless chicken

6. Salt and pepper

Step 1: In a 13 inch pan, pour olive oil until the pan is fully covered and proceed to let the oil get hot. The hot oil will allow the breaded crumbs on the chicken to become crunchy.

Step 2: While the oil gets hot in a bowl crack both eggs and stir until scrambled. Once the eggs are scrambled, in another bowl pour the wheat bread crumbs in and flatten with a spoon.

Step 3: By now, the oil should be hot. Set to a little under medium and place a piece of chicken into the mixed eggs and then onto the bread crumbs (both sides).

Step 4: Gently set the chicken on your pan and cover with a lid.

Step 5: Let each side cook for about 7 minutes on each side. Be sure to continue checking in-between the 7 minutes (every stove top is different).

Step 6: As soon as each of the piece or pieces of chicken is crispy and (not soaked in oil) set on a napkin so that the olive oil can disintegrate into the napkin. Once the chicken is warm, it's ready to eat!

I recommend eating this dish with any choice of vegetable or a smoothie. Sticking to low fat side is key to a completely healthy meal. Good luck!
