I'm going to be completely honest, meat is bad for you. There is no real reason to eat it. You can get the same nutrients without all the health risks from tons of other foods. However, most people don't want to cut out meat entirely, which I completely understand. Just because i'm a vegetarian doesn't mean I don't realize how delicious chicken wings are. But I digress. It's really easy to not eat meat. Like, instead of having chicken, have tofu. Or just vegetables. It's that easy. But in case you're lacking motivation, here's some easy, delicious, meatless options for you to work into your life. They're all flexible and diverse, so you can easily bend them to fit your tastes. I apologzie in advance for making you hungry.

Zucchini "meatballs"

Okay, so what you wan to do is get like two giant a** zucchinis. wash 'em, shred 'em. Then put the mound of succhini shreds on a towel, squeeze out all the juices, mix them with bread crumbs and eggs and all the good sh*t you put in your meatballs (besides meat). After that, form them into balls (size doesn't matter) and cook them in your sauce of choice.

Penne with Artichokes and Roasted Red Peppers

Boil some penne. Chop up some artichokes. Chop up some roasted red peppers. Put 'em together. Taste the rainbow.

Tofu Fajitas

I don't know what you like on your fajitas, everyone's different. So get your sh*t, chop it, cook it. Get your tofu, cut it into some thin strips, cook it with some taco seasonings. Heat up your tortillas. Get out your salsa or sour cream or cheese or whatever the f*ck you want. Assemble your creation. Do a little dance because it tastes so damn good.

Black Bean Chili

Bruh. Literally so easy. Literally so delicious. I can't even, just make it.

Greek Orzo Salad

My best friends dad would make this for us all the time. Its cold, its fresh, its light, its tasty, its fool proofs. Cook some orzo, chop up some olives and tomatoes and stuff, put some oil on it, refrigerate it, eat it pool side. Enjoy you grecian vacation.

Coconut Curry Vegetables

I get this at Red Bowl all the time. I have no idea how to make it, I just know that its delicious.

Eggplant Parmesean

Classic. Italian. Delicious. Unhealthy enough to be satisfying. This one is pretty self-explanatory. Noodles, sauce, cheese, eggplant slice. Repeat until theres enough for fifty-seven people and three elephants. Cook it, eat it, bask in the impending food coma.

Tofu Stir Fry

Like the fajitas, it's all you, bud. Put whatever you would normally put in your stir fry except use tofu instead of meat. Yes, it's that easy. And delicious.

Macho Nachos

My suite mates dad makes these. I don't really know how he does it, but they're magical. Put everything you can think of to put on nachos in the nachos, bake it, eat it, die happy. Just don't put any meat in it.

Veggie Ciabatta Sandwich with Hummus

I get this form the sandwich shop on campus all the time. I usually get ciabatta bread wiht hummus, spinach, cucumber, lettuce, tomato, green peppers, and feta cheese if I'm in the mood. So its basically a vegetable sandwich, but with hummus.

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from.
